Pavlova
4 egg whites
1/2 tsp cream of tartar
1/4 tsp salt
1 cup sugar
1 tsp vanilla extract
1 1/2 tsp potato or cornstarch
Whipped Cream
1 1/2 cups heavy cream
1 vanilla bean or 1/2 tsp vanilla extract
2 Tbsp sugar
1/8 tsp salt
Toppings
fresh fruit such as strawberries, blueberries, oranges, etc... (be creative!)
Pre heat the oven to 350f
To the bowl or a stand mixer, add your egg whites, cream of tartar and salt. Using the whisk attachment, beat on high speed until the egg whites get frothy. While mixing on high, slowly sprinkle in your sugar making sure not to add too much at once. Once you've added all your sugar, beat in your vanilla. Then, remove the bowl from the stand mixer and gently fold in your cornstarch. Carefully place your meringue on a baking sheet and shape it into a circle. Make a well on top of the Pavlova about 5 inches in diameter. Carefully place your pavlova into the oven and immediately reduce the temperature to 250f. Cook for 1 hour to 1 hour and 15 minutes or until the Pavlova is dry and crispy to the touch.
Turn off the heat, crack the oven door and allow the Pavlova to cool completely.
Next, in a bowl, add your heavy cream. Using either a whisk or an electric beater, whisk until stiff peaks form. Then add your vanilla, sugar and salt. Mix again and set aside.
To assemble
Gently place your Pavlova onto a cake stand or plate. Add your whipped cream into the well in the middle. Garnish with your fresh fruit and optional mint leaves.
Slice and enjoy!
