►► INGREDIENTS ➜ 48 raciones en total aprox. ◄◄
► VANILLA AND YOGURT CAKE (pan with 15cm - 4 layers - 20 rations approx.)
● 5 Large eggs
● 300g White sugar
● 200ml Soft olive oil or sunflower, canola or corn.
● 200g Natural yogurt preferably sugarless (can be swapped for milk or coconut yogurt, vanilla, lemon, etc)
● 140ml Milk
● 2 Tsp of vanilla extract
● 420g All purpose flour
● 4 tsp of baking powder (18g approx.)
● Pinch of salt
► VANILLA AND YOGURT CAKE (pan with 20cm - 3 layers - 28 rations approx.)
● 7 Large eggs
● 420g White sugar
● 280ml Soft olive oil or sunflower, canola or corn.
● 300g Natural yogurt preferably sugarless (can be swapped for milk or coconut yogurt, vanilla, lemon, etc)
● 180ml Milk
● 1 Tsp of vanilla extract
● 580g All purpose flour
● 5,5 tsp of baking powder (25g approx.)
● Pinch of salt
► SYRUP
● 80ml Water
● 80g White sugar
● 1 Tsp of vanilla extract
► CHOCOLATE GANACHE FOR THE FILLING AND FIRST COBERTURE OF THE 2 CAKES.
● 350g Black chocolate
● 250ml Cream with at least 35% of fat
● 50g Unsalted butter
► CHOCOLATE GANACHE FOR THE COBERTURE OF THE 2 CAKES.
● 480g Black chocolate
● 300ml Cream with at least 35% of fat
● 60g Unsalted butter
► NECESSARY FONDANT (approx.)
● 1 Kg Red
● 1 Kg Blue
● 250g White
● 500g Light Green
● 150g Dark Green
● 200g Brown
● 50g Yellow
● 10g Grey (or white fondant with a little edible black dye)
► OTHER
● Tape or Washi Tape
● Silver powder paint
● Edible glue and water
►► PREPARATION OF THE CAKE
● Mix the eggs a little to foam them. This can be done by hand or with an electric mixer.
● Add sugar, oil, yogurt, milk and vanilla extract. Always thoroughly mixing after an ingredient is added, before adding the next.
● On the mixture, we sift the flour, the baking powder. Add the pinch of salt. And mix gently until they are fully integrated.
● When we no longer see leftover flour in the dough, bake it.
● In my case, I baked the cakes at 180º Celsius with heat up and down and without fan. The top cake was put in 4 molds of 15cm in diameter and took 30 minutes. And the bottom cake I put in 3 molds of 20cm in diameter and took 45 minutes. But remember that the baking time, depends on the pan and the oven.
►► PREPARATION OF THE SYRUP
● Put water, sugar and vanilla in a pot or saucepan over medium heat. And heat for 1 minute until the sugar dissolves.
● Allow to cool before use.
►► PREPARATION OF THE GANACHE (filling and coberture)
● Heat the cream to the point of boiling. Add it on the chocolate and mix well to melt the chocolate.
● Add the butter at room temperature, mix again until it melts and cover to skin until it is at room temperature.
