While it may well be that the experts are booked in advance and they know what will be coming in the door in advance (I just don't know but I'm willing to believe you for the purposes of argument), the show is not filmed in a studio - its filmed in the shop. I've been there. Its actually a really cool shop - if you're ever in Vegas its well worth a visit. Bought my replacement wedding ring there.
