The Mind of a Chef
Narrated by Executive Producer Anthony Bourdain, The Mind of a Chef combines cooking, travel, history, humor, art and science into a cinematic journey, each episode capturing another glorious flicker from the mind of its subject and focusing on what it truly means to cook, think, create and live in the food-obsessed world that is The Mind of a Chef.

Rewatching this makes me appreciate the editing so much. Stitching together Sean cooking with his mom with the discussion of Southern agriculture in the field was moving.

I am finally so glad to see someone frying dredging and frying spoke salad😢. I showed my my kids what my mother showed me and they were so amazed. The stalk of that can be dredged and flowered, fried like okra.

Just in case you don't have self rising flour: For every 1 cup (120g) Unbleached All-Purpose Flour add 1 and 1/2 teaspoons baking powder and a 1/4 teaspoon table/fine salt.

A locally adapted variety of plant, veg, herb, is called a LANDRACE. At least here in UK. They are precious jewels. Local seed-swaps sometimes feature them.

That's my food history for many generations. Hickory King was livestock feed but we preferred it to sweet corn. We ate poĺk and grits and loved it ❤❤
