I sat down with him and asked him what he would like and did menu planning, including his choices. He is 39 now and jokes about my journey to planning healthy meals for the family. He recalls big slabs of pan fried tofu, pasta with beans, including mac and cheese (dairy) with chickpeas added and baked ziti with cottage cheese instead of ricotta cheese. I really tried to make our meals healthier in those days, prior to going WFPB. I didn't realize how much he disliked some of our meals, especially in comparison to his friend's eating style. We all have a good laugh but some of his memories are cringe worthy!! My 37 year old daughter doesn't feel the same way. She liked our meals more. When my kids were little, a friend of mine was big on snacks foods and had a pantry full of Costco snacks such as chips, cookies and sour patch kids. Going to her house was so much fun for my kids because I did not buy that stuff. If my kids wanted sugary cereal like fruit loops or Cocoa Puffs, it had to be their snack for the day (they were allowed 1 sweet treat a day), not breakfast. Hahah, I tried!

My saving sanity tip is to find 2-3 recipes and buy and prep ingredients. Bag them. Prepare throughout the week. Love the instant pot! I am family of 1, a senior and working full time. I enjoy having a freezer stash.

Great tips, Jeremy! At times when I know I am going to be gone all day I put my cut up veggies, broth, lentils or canned beans and spices in my instant pot in the morning before I leave, I then set a timer (which I bought to use with my instant pot) and set the timer to start cooking about 30 min. before I get home. When I am ready to sit down to eat, I throw some already cooked rice and cut greens into a bowl and ladle my stew over the rice and greens. The hot stew warms the rice and greens and the meal is ready. If I am feeling extra fancy I squeeze some lemon or lime and/or add microgreens to the top of the bowl - and enjoy a quick and delicious meal!

I spent about 2 weeks amassing dinners that I like and I took index cards - 31 of them and at some point during the weekend before I food shop, I shuffle the meal index deck and randomly choose 5 meals. I plan for leftovers for a couple of days or if one of the recipes will give me 2 nights of leftovers but honestly, I usually have leftovers for lunch. Sat and Sunday are usually meals that take a bit more time because I have it. I have been doing this since the 90s. I know what to buy at the market cuz I know what I am eating. The thought process of what am I going to eat tonight? I am tired I don’t want to think of it etc.

With all the books you’ve reviewed, have you ever found a good recipe for plant-based tiramisu? The vegan recipes available are delicious but they’re just plain white sugar, vegan mascarpone, etc. they’re really tasty but very far from whole food plant-based. The closest I ever found was a version on the channel called whole food plant based cooking, but I still feel it’s missing something. Any inspirations you’ve come by?
