This compilation video was good, like all the others! I really enjoy them a lot. The recipes all look good, especially the scones. I love scones and the ones in the store are so unhealthy. I have most of the books these recipes are in. The apple pancakes and carrot cake pancakes look really good, too. This inspired me to try some new recipes for breakfast. We are in a food rut around here, so thanks! 😊

I really enjoyed this video. I want to make all of the recipes. I own all of the cookbooks and looked up the recipes. The carrot-cake pancakes recipe was in Kim Campbell's "PlantPure Comfort Food." She also has a "PlantPure Nation Cookbook" that has 2 other pancake recipes.

Before I was vegan I bought a box mix for pancakes. It called to add water I added orange juice instead. I found with the OJ it was sweet enough that I didn't need the syrup on top.

I make carrot cake oatmeal but I've never made them into a pancake. Definitely going to try this! I pretty much just do shredded carrot with finely chopped pineapple, vanilla and cinnamon. So I would add some pineapple to the pancakes. Thanks for all the great ideas!

You should look into a non stick electric skillet it's actually called a crepe skillet. It's circular. I got mine off of Amazon. Nothing ever sticks to it and never have to use oil or butter. One of the best things I've ever bought.

Is the listed one cup of flour correct for your version of the pumpkin scones? I want to make them tomorrow but the Veganomicon version has 3 total cups of flour so I am confused on such a huge discrepency!! Thanks for clarifying. Samantha

I mean... you can always start with 1 cup and then see the texture and then slowly add up to 3 cups if you think it's needed? My video should at least be accurate in what the uncooked dough looks like.... sorry for the confusion here!!!
