PEA PICKING CAKE 🍰 The Best Southern Cake Recipe! ***THIS RECIPE IS NOT LOW CARB OR KETO!*** This delicious orange and pineapple cake recipe comes from an old church cookbook my grandmother gave me. This is her recipe for PEA PICKIN' CAKE (sometimes called Pig Picking Cake.) This old southern cake is moist, fluffy and light, and lives in the refrigerator - ready to be enjoyed on a warm spring day. I've included my "updated" recipe below that adjusts the ingredient amounts to more modern product package sizes. Enjoy! #PeaPickingCake #CakeRecipe #WesShoemaker --------------- PEA PICKIN' CAKE RECIPE (Recipe adapted from Deana Muns "A Book Of Favorite Recipes" Compiled by The Reaching Out Group, Sardis United Methodist Church, Sardis Georgia) Cake: 1 box yellow cake mix 1 15oz can mandarin oranges (including juice) 4 large eggs 1/2 cup cooking oil Put all ingredients in mixing bowl and mix well with a hand mixer to break up the mandarin oranges into smaller pieces. Pour into a buttered 9x13" baking pan. Bake for 30 minutes at 350ºFm or until a toothpick inserted into the center comes out clean. Allow to cool completely at room temperature. Frosting/Filling: 1 15oz can crushed pineapple (including juice) 1 3.4oz box instant vanilla pudding 12oz frozen whipped topping, thawed (Cool Whip) Combine pineapple with juice, pudding mix, and thawed whipped topping and mix well with a whisk. Spread evenly on top of completely cooled cake. Cover tightly with plastic wrap and refrigerate overnight or at least 2 hours before serving. Store in refrigerator and serve chilled. (Recipe may also be baked in four 9" cake pans and assembled with frosting between layers. I totally understand, I have been keto for over 6 yrs. I still do a lot of baking for my family, I am the only one keto. It would be a slippery slope for me, I am like an alcoholic with sugar. I'm 67 yrs, and I don't think I will ever change. I think my family will enjoy this cake!

Being a Southern albeit Floridian girl and learning most of what I know from my grandmas (My Grandpa was a Methodist minister so I have several of those church cookbooks)...I can't wait to see what you choose next. Very happy you're doing this. I became a fan not because of low carb (I eat a normal diet) but rather because i really liked the down-to-earth humor and storytelling that were present especially in your early videos. Some of my favorites are "Swiss Enchiladas" and "Lemon bars", for that reason! Your recent one about tiramisu feels like you're back to your old ways 😄

Ooh I'm going to try this! I recently moved to Texas from California and I'm enjoying all the southern desserts... Peach cobbler, banana pudding, etc. We have family coming from California and this is definitely one I'm going to try. I would only try it with a large amount of other family around so I'm not tempted to eat the whole thing myself! By the way, regarding your low carb viewers being triggered by this, I think it's incredibly unrealistic to think that us keto folks will never eat another bite of sugar again. Even Steve at serious keto admitted the other day that he had some churros at a Christmas party. We are all subject to fail from time to time. But the point is you get back up on the bandwagon the next day and get your diet in check and go about your business as if it never happened. No one needs to fret over it! Now, can you please turn this into a low carb so we can eat it more regularly??!?! 😆😆

I love this, Wes! When you described it like sitting on the back porch with the a/c coming thru the screen door, I teared up. Some of my best memories with a cake just like this and a setting just like that! Possible with purple fingers from shelling peas!! I also collect old cookbooks. My oldest is from the 1800's, brittle pages and falling apart but filled with recipes and cures and I have many community cook books. I have a recipe for the same cake but with coconut sprinkled on the top and it is called Tropical Delight. I have been eating Keto since September and haven't tried to make any low carb desserts yet but I have others in my house who would love me to make this cake. Thanks

So much fun! My Grandmother served a variation on this cake as a "poke cake" that had coconut pudding layer smoothed into the pokes, underneath the Cool Whip/pineapple layer, garnished with extra segments of mandarin and coconut curls. She'd host an annual summer luau dinner, and this was always dessert.

Love how you are resurrecting sweet memories through old recipes and stories. I've not abandoned digital storage but I have started converting favorites to handwritten recipe index cards that I keep in a copper recipe box. It's just satisfying. Keep doing what satisfies you too, please! P.S. The pan shrinkage mystery baffles me, too and it doesn't seem to be type or brand specific.

This is the exact recipe I use! It is soooo delicious and definitely a crowd pleaser. I find that if I bake it in a half-sheet pan it bakes more evenly and feeds more people. I got the recipe from a lady at church. I always knew it as Pig Pickin Cake. If you've never tried it you are missing out! Make it and you won't be disappointed! Tastes best cold 😊

I have several of those "church" cookbooks, although one of them was an employee recipe book put together by a group at work I belonged to. There are some treasured recipes in there. Like you I also love old cookbooks, all kinds of cookbooks really. I read cookbooks like a novel :)

Easter surprise cake. We make it every Easter and it has three layers instead of four. I do like it better like that because you get more of the icing and it seems more like a torte.

Reality is many of us are having to cook regular food on the daily anyways!! So I for one actually appreciate this, as will my husband and kids lol

If you ever figure out how to low-carb this one... whoo doggies! :D I love old recipes and old cookbooks (I have a collection myself)... and I've adapted some recipes for the lifestyle. You just hafta do a bit of thinkin'. :)

No need to apologize. Anyone who says they never ever go off diet is lying. I save full carb/ sugar deserts for family get togethers and such so I can have a little but not have leftovers around. Those church cookbooks are the best ❤

I used to make this cake all the time (before my keto days)! It is so moist and scrumptious. Always a hit. My recipe called it a Pig Cake for some reason...I like your name better. :)

Hey, I do low carb 90% of the time. And then there are holidays! This is holiday food for me, can’t wait to try it. 😊 my other favorite “easy” cake is a box of angel food cake mix and a large can of crushed pineapple (“crushed” not chunks, important!). And that’s it. Bake in a Bundt pan, top with cool whip if you want. The batter foams up dramatically, so don’t completely fill the pan or you’ll end up with a mess. Bake on a cookie sheet, just in case.

Ok. One more comment: I started to tear up. I don't have any grandparents left. When you said it tasted like 1982, sitting on the porch, with a little air conditioning coming through the screen door, while eating that cake, I got emotional. I'm not from the south, I had never heard of pea picking cake before, nothing in your description reminded me of my childhood, other than the fact that certain foods bring back certain memories, and make us miss those that only live in our hearts at present. 🤗

We call this delicious cake ‘sunshine cake’ ☀️ My recipe calls for 2 tsp orange extract added to the cake ingredients.

Love this new channel! I’m low carb but I still love watching normal cooking videos and having high carb treats once in a while. I am human after all! And I’ve lost 40 lbs and maintaining this way.
