PEACH JAM - Peach Preserves -Easy Homemade NO PECTIN Peach Jam Recipe-From Kevin West, Saving The Season

No Pectin Peach Jam Recipe & Instructions:
Makes 6, 1/2 pint jars
-Ingredients
5 pounds ripe peaches
2 tablespoons freshly squeezed lemon juice
3 1/2 cups sugar
-Procedure
1. To peel the peaches, slash a shallow "X" in the pointed end of each fruit. Working with a few at a time, blanch the peaches for 60 to 90 seconds in boiling water, or until the skin loosens. Lift the peaches out of the water using a slotted spoon & set them in a bowl of ice water to cool; remove the skins & pits from the peaches. Slice each peach into quarters, then cut each quarter crosswise into fourths. Mix the peaches with the lemon juice, stir in the sugar,& leave to macerate for 30 minutes.
2. Turn the fruit-sugar mixture into a large preserving pan, & rapidly bring to a full boil. Reduce over high heat to the gel point, 8 to 10 minutes at a full rolling boil, while stirring constantly. Do not stop stirring your peaches during this 10 minutes, bc your peach jam could scorch or burn. If the jam is too chunky for your liking, turn off the heat & stir with a whisk for another minute, to break down the chunks. Ladle the hot jam into six prepared 1/2-pint jars, leaving 1/4 inch headspace. Seal the jars, & process in a boiling-water bath for 10 minutes.
Check the jars to make sure they have sealed properly. The lids shouldn't move up & down when you press in the middle of the lid. If a jar hasn't sealed, you can refrigerate it & go ahead & enjoy!

We went to the farmer's market this weekend bc we wanted to pick up a basket of peaches. Well when we got there, they had peaches on sale for $12 a box! So we grabbed 2 boxes of peaches & decided to make some canned peaches, peach preserves, & some no pectin peach jam.
I just love Kevin West's book, Saving The Season, & so I went with his easy peach jam recipe. Bc so far, Kevin's book has yet to fail me thus far.
And just like his easy strawberry jam & also his blackberry jam, the peach jam was so easy to make & was just absolutely delicious. I cannot say if this is the best peach jam recipe in the world, but it dang sure is some really good peach jam, & the peach jam was super easy to make.

It looks like the jam in the jar you were eating was thin. Does it thicken more as it cools/chills?

Looks really good. Great video - informative and entertaining. It would have been nice though to see the consistency of the finished product. Like you could have spread it on a piece of toast or something. Since it's without pectin, it would have been nice to see if it gets to the consistency I like. But otherwise good vid.

Love this. I'm gonna do it ❤ my mom used to make homemade jelly and jam. I used to stuff her homage Bismark s and roll them in sugar. Man they where good. I found the recipe in her cook book when she passed. ❤

Get yourself a "Instant Pot." You can put about 6-7 canning jars in it for 3 minutes and the lids will start popping immediately when you take them out. You can use that Instant Pot for all types of things. Saves a lot of time.

I made the peach jam tonight. This was my first attempt at peach jam. It turned out wonderful. I did have to cook mine longer than 10 minutes but you gave excellent instructions and it is great!!! Thank you so much.

Thanks!! It does get a little thicker as it cools off & especially once it goes in the fridge and you can also keep it on the heat longer as well to get it thicker. Thanks again!!-Jason

Just discovered your jamming videos. Can't wait till peach season in SC. Nothing better than SC peaches fresh from the fields. I ordered the kindle book. Everything I have read said not to use fresh lemon juice but bottles. Things change I discovered. Many moons ago, in hs home educ, we made jelly and sealed with paraffin. Now they say don't do that.

Nice video but I will share with you that if you cook your jam about 20 minutes you will get a thicker jam. I always process the final product in the jar for 20 minutes. That is to ensure the product is sterile because I don't waist time pre sterilizing my jars. Happy canning. You have a cute little family.

the easiest, comprehensive, fun video I have ever watched. I have canned for many years with pectin, trying to do things more natural....I just completed 10 small peach jam. they look adorable. If you can get some Saturn, Doughnut, bagel or flat peach trees..get twice as many as you thought..those little suckers are so..so..so..SO Sweet! Check out Raintree Nursery, or Stark Nursery, or your local ones..the only problem is the usually make them dwarf trees, I think you’d get more peaches from a semi dwarf or standard size..

Not sure about this one. The rest of the jam making world uses Fruit pectin to thicken the jam. When the guy was spooning the peach contents from the jar and waving the thing all over the place I could see the ”so called JAM” sloppin’ around in the jar. Use Pectin, it’s cheap and it’s insurance that your jam will be jam and not a purée. Sorry guy, no sale for me.

Thank you. Great Video. I just made my first batch with 12 lbs of peaches. 23 peaches 4 T lemon juice and 3 cups of white sugar total. Used your method except I cooked it for an hour stirring constantly to reduce it more. Turned out really well. Thank you for giving me the confidence to make Peach jam. Now on to Concord Grape Jam.

My jam didn't set very well. Unfortunately I've already jarred them. Tested the leftovers this morning and it's so loose... Is there a way to fix this and use the same jars and lids or am I just stuck with it and best of luck w my next batch...?

I am not that scientifically minded; but the way he was moving them jars around in his hand if I am right sound like glass jars. Will they not crack when popping them in boiling water before I ever make the attempt.

I found that the peach jam was still pretty watery after 10 minutes of boiling and stirring. I ended up boiling for 30 minutes and adding some more lemon juice, just to be on the safe side.

I loved the whole video, right up until you were whipping around what you had just preserved and it was sloshing around as pure liquid. I have made freezer jam that was less liquid and more spreadable. Looks to be a great topping for ice cream, but I would not try to spread it on bread or toast.

It will thicken as it cools, but it’s not a super thick jam 😊

So, if I make a smaller batch and plan to eat it after I don't have to do that last boil right? That's only to seal them for future use?

You know you can cut the sugar to 1 3/4 cup sugar and it will set up fine, but you have to cook it longer. We did it all the time when i grew up because my mom is diabetic.

We hope to go to the orchard tomorrow to pick peaches, and maybe some Paula Red apples. I made canned peaches many years ago and my daughter ate all of them when I wasn't looking. I was a little bit disappointed. I asked her if she will eat them all if I make some again, and she said Yes. Thanks for the recipe for jam. That would be good on homemade bread. Kimberly wants some of that jam.
