Big fan of Chef Parisi and I have been quite successful in replicating many of his recipes. This one not so much, I've made it twice following the recipe exactly and both times the cake needed way more time in the oven then the recipe recommends, which resulted in an over baked crust. I also found that the recipe produced more batter than an 8x3 cake pan can hold. I will try this again but this time I will use cake pan strips and a 9x4 pan. The strips allow the cake to bake evenly instead of from the outside in, resulting in a hard crust and soggy middle. I also think the baking time needs to be increases to 60 minutes or more simply because of the wet fruit which release moisture as the cake heats up. I'll let you know how this works out.

Delicious cake😋 we baked it today but it needed more time in our oven. Is it better to cook this in a static or fan setting?

If I choose to do a pineapple upside cake instead of peach, do I still use the caramel sauce as the base?

I've made pineapple upside down cakes so many times (not recently, I cannot find beautiful, fresh, juicy and not so darn expensive pineapples 😢... but I find this a great idea, I will try it now that we're in peach season; also adding mascarpone sounds great, I used to add yoghurt. Thanks for the recipe Billy. Btw, have you considered including the measurements in metric system and celsius degrees? That would make you UNIQUE! You have ppl watching around the world... It would just be nice.
