Chef's Notes: 1.) The first step in the Adobo Peanuts recipe is to blanch the peanuts for 1 minute. You can omit this step but from experience, I have learned that this one, simple step will make a lot of difference in ensuring that your peanuts are and will stay crispy for a longer time. 2.) You can use either brown or white sugar for the peanut brittle. I showed you both. For the peanut brittle, you can use either whole or crushed peanuts. I also showed you both ways. 3.) For the sugar coated peanuts, feel free to try other variants. Just remember to add the variant ingredient when the sugar crystallizes so that when the sugar melts and caramelizes, the variant ingredient will stick to the peanuts.

No need/. Just make you drain it. Anyway, you all the blanched peanuts to warm or room temp NOT hot oil.
