The main trick to getting to pearson airport departures level faster is come early (2hrs). Of course, knowing your way around the airport saves you time. This video did a good job illustrating the entry gates depends on mode of transportation you use to get to terminal 1

Awesome content- Just a quick question regarding accompanying travellers to the checking counters- is it still applicable? I checked Pearson Airport's official website, but couldn't find anything. In the next 2 days, my parents are visiting and I would like to check if I could accompany them to the check-in counters.

You can find taxis at the airport 24/7. Just follow the official taxi signs once you get out off baggage claim.

I consider paying $100 for surplus luggage (for an extra 2kg item worth $5) as a fine. Normally, if you're short on time, you won't have an opportunity to argue your way around it. Or open your suitcase, re-arranging some stuff over to your carry-on. Knowing your exact routes around the airport saves you time to deal with such hassles
