Another great video! One question I have though is how would they know about the animals tail and arm length if they only found part of the jaw?

Mostly by association to family members, particularly the heterodontosaurus. It's pretty common for dinosaurs to be based off of only a few bones, and then base it's entire body on related family members with better specimens. Arguably, this can result in dishonest representations based on hypothesis rather than direct evidence, but they are family for a reason, as they often share various characteristics and features.
