Those look great! I’m a huge fan of the Fire Dial. I’ve had mine for a couple years now, works great on my 18” WSM. I’m with you, the smell coming out of the Weber when the drippings are sizzling away really can’t be beat. I use mine on all my pork cooks, but for beef I still use a water pan. I plan to follow your lead on a brisket cook using the Fire Dial. I also like how much less fuel I use now without the water pan. Thanks for your videos, can’t wait for the next ones.

Thanks for the feedback!! I really appreciate it. I am actually going to do a brisket tomorrow with the FireDial. I’m going to start the fire with less lit coals and am going to barely have the vents open. Hoping to keep temp down as much as possible.

Try elevating your temp probe off the grate. It looks like it's touching the metal grate which would be hotter than the air around the ribs. Ribs look great!

Awesome video as usual, thank you! I've been using your basic formula for baby back since your first video on the subject have always come out perfect. I thought about the fire dial, especially since in Winter I have a hard time getting a temperature much above 250 to 270. My one concern is how bad is the cleanup since all of that fat is going to drip down to where the coals are and into the Fire. Looking very much forward to your next video on the brisket with the fire dial. Cheers!

Well, here’s the good thing about cleanup, it’s simple. You simply flip the FireDial each time you cook and the heat/fire will burn off the gunk from the previous cook. Or you can flip it when the cook is over and the coals are still hot and it will do the same. So far the few times I have used the FireDial it’s been amazing which I was not anticipating.

@@RaceviceSmokehouse I haven't cooked brisket this way, only ribs, butts, and pork steaks. For pork butt, fat side down for sure. I've had to practically close all my bottom vents on my 22" WSM to keep it from going over 300F. I'm not running any diffuser, just direct heat. You will get color and bark formation faster as you have experienced with this cook.

Nice ribs!!! I use both water pan without water and the firedial. They are both great but I prefer less of that "grease fog" for bigger items like pork butts. Smaller items (shorter cooking time) like birds and ribs tend to work out better with the firedial.

The fire dial would be useful for a kettle but its a waste of money for the wsm because the water bowl does the same thing. But if you dont use the water bowl then yea would be good but still a waste of money. For me that is

Thanks for the feedback, but I have to disagree. The FireDial has been awesome. I use less fuel, the cleanup is easier and I believe the flavor is better. The drippings hitting the metal gives off great flavor and aroma. I’ve really enjoyed using the FireDial and always hated the water pan. I would wrap in foil and fill with water and it was nasty to clean and I feel it was a waste of water and foil. That’s the great thing about bbq, we all find what works for us. Cheers!

I started off the same way. But I started using less coal and less coals to start up. I use less fuel overall and I think it works out great.
