Chorizo and potatoes, chorizo and bean, and potato and egg are my favorite breakfast tacos, but gotta be salsa verde. Barbacoa is the Sunday special around here, and carne guisada is great too. Gotta love migas/chilaquiles, because I heard you like tortillas in your tortillas 😂

Greetings from Austin! I agree with the recommendations given for breakfast tacos but I do want to add: Dan's Hamburgers (sounds weird but trust me! Bacon, eggs, potato and cheese on flour is amazing). Also, homemade breakfast tacos are the best when you have butter tortillas from H-E-B.

I grew up in Arizona but was raised eating New Mexican styled food. Hatch green chile is my personal favorite but I know its popular to have chipotle chile or a combo (Christmas style).

I'm from Korea and living in Melbourne studying patisserie and working in a bakery. I've watched you making the chocolate cake in NYT Cooking channel and the other day I made your coconut cupcakes which was AMAZING. Then, for some reason, I thought myself whatever your version of lamington cake is, it would be exceptionally great. I've only ever had breakfast burritos and then I was exposed to a breakfast quesadilla (shout out to Marriott in Brentwood California at a wedding a few years ago). Not a hidden gem spot lol, but truly a personal leading form of enjoying breakfast (pico, sour cream to choose your adventure on the side) I don't see served at restaurants. It's always breakfast sandwiches or burritos in California. The child and adult in me was beyond thrilled. I'll give tacos a shot next. Thanks!

Just some clarification, maybe the chef grew up in central/south Mexico. Us that grew up in northeast part of Mexico, south of TX border (Tamaulipas in my case), we've been eating breakfast tacos forever... that migrated into TX of course, as all good things do. Thanks for sharing this video, Claire!

He did, you can hear the central mexican accent not the northern accent. They do that a lot especially the chilangos they erase the entirety of northern Mexican culture all the time.

This guy is confused because my family is from central Mexico and we all eat breakfast tacos. I would be surprised if they don't eat something similar in the south. Huevos a la mexicana with some refried beans and you make a taco out of it. Chorizo con huevo is also very common and they're eaten as tacos.

That is true, i had never heard of breakfast tacos until i moved to san antonio tx. Or people using lemons instead of limes, or yellow cheese as a topping. And so many other things. Im from northern mexico and even though a lot of the food is very similar theres a lot of white culture infused in what Texans call mexican food. But its really inspired by the food we have in northern mexico. Mexico is huge so the food here is really a small percentage of what mexican cuisine is.
