To clarify what she meant by "lime or lemon it doesnt matter as long as its lemon" in spanish the word " limón" is used for both limes and lemons. Its only specified in english. Go with your heart 😌 or just use lemon cause she used it 😂😂😅

It’s so interesting to see different cultures having almost the same dish with different names. I’m Egyptian and we make this rice also with tomato sauce, onions and lots of spices (all varies according to different family traditions and preference ofc) but ours is made with short-grained rice instead. It’s typically served with fish and seafood in general and it’s incredibly delicious!

I think she refers to the acid, it helps brake down the rice protein and starch and makes it tender and not mushy😊 you can also add 1/2 tsp of balsamic vinegar

@@jaimemoralacreacion Mexico is part of America. There's all types of different ways they make Spanish rice in Mexico. Arroz a la Mexicana, arroz Mexicano, arroz rojo, sopa de arroz whatever it's called usually has a lot of good seasonings and I've had it with all kinds of different ingredients, lime cilantro, cinnamon, cumin, adobo. It's not like you can really go wrong. But the best rice in Mexico City is at Asian Bay 😂.

This is exactly how I cook my Spanish rice. I used to have a Mexican neighbor that did not know how to bake and I did not know how to cook so we traded off... once a week we would teach each other how to cook something. That's been almost 20 years and I still make rice the way she taught me 😊

@@Natasha___., yeah those leaves are an acquired taste! I find Collard greens 🥬 leave works for me! I steams them for a while to make them pliable! Sprinkle them with salt & pepper before adding the stuffing and they taste great! I actually think they taste better, but that’s my personal preference 😊

I’ve never been able to make it taste restaurant style with just tomato past! It ends up tasting like tomato soup. It’s all about the red Enchilada sauce or red taco sauce. Money Give that a try ;)

My mom is from Michoacán the way we do it similar but we blend everything(tomatoes,cilantro,onion,garlic, and the Sazon packets.)and lime will actually make the rice a bit bitter while lime won’t.

I'm black but I grew up making a rice dish very similar to this. I call it mushroom rice. I brown the dry unwashed rice in butter or margarine for 5 mins with diced onion or until about half of the rice is browned just as shown in this video. Then once I'm ready I add the chicken bouillon just as shown in this video and make sure it's evenly mixed with the rice and I also add a can of mushrooms sliced or diced. Any type of mushroom is OK. Bring to a rolling boil on high heat and then turn down low and cover until rice is cooked. Can top with green onion if desired. Yummy. Funny that the few times I have tried Mexican rice it hasn't turned out too well and now I see it's almost exactly the same as something that I been making since I was a kid. I will try again soon.

@TheMariemarie16 Brown 1 cup of long grain rice, add 1 small can of Tomato sauce , 2 cups Chicken broth, , Garlic, onion, salt, pepper to taste, bring to a quick boil, lower heat to “simmer”, Set timer for 20 minutes , turn off heat, do not open lid, let sit for about 15 minutes, then serve 😊

and probably where this recipe originated, the Spanish came to America with rice, onions and garlic and the Mexicans contributed the tomato, and it must be derived from the Spanish paella, the difference is the tomato, since at the beginning the Spanish did not eat tomato because they believed it was poisonous, until they learned from the natives

It's so fascinating how humans have so much similarities, I am Egyptian, my grandma makes this rice with a little bit of twist, she roasts the rice then adds fresh tomato juice and some chicken stock for falvor, she usually have some diced onions in the tomato sauce as well, my favorite ingredient is the eggs she breaks inside the rice while it is cooking, we don't eat runny yolks but it is on the softer side not hard. Fun part is I don't think she even knows where mexico is. BTW this recipe is really really old, new generations don't know much about it unfortunately.

If it's "Mexican Rice" there's NO Lemon or Lime in it. And the rice is toasted to a light brown then add minced onion and cook a minute longer. Press a clove of garlic and stir in. Add chicken stock mixed with ½ teaspoon of Cumin, tomato sauce and Chicken flavor Knorr bouillon. You can add water if needed, bring to boil then cover and cook on low for 20 minutes. Turn off heat. DO NOT UNCOVER OR STIR and let sit for 15 minutes. Perfectly cooked fluffy rice every time! 😊

Mexican and Spanish rice IS Jollof Rice lol. Rice does not come from Europe or the New World. The Moors brought rice to the Iberian Peninsula and slaves brought rice to the New World by weaving grains into their hair (cornrows). Inversely, tomatoes come from the New World and did not exist in Europe before they came to the “New World”. Now, you gotta ask yourself how Africans got their hands on tomatoes before the Europeans if Europeans allegedly discovered the “New World”.

at some grocery stores you can buy tomato paste in tubes instead of in the can! i keep mine in the fridge and it’s so nice not to waste any or end up with moldy tomato paste because i forgot about it.

I didn’t use the lemon. I added chicken bouillon, cumin and garlic powder To the tomato paste mix. And I had to walk away for a sec so my rice got toasty. Used a jalapeño and it was a little to spicy for my littlest but was great for everyone else. So good!

This is one of my favorites. I use spicy V-8 juice instead of tomato paste. I put some cilantro in there right before I put the lid on to cook. It's so good.

Mexican rice doesn’t have lemon that’s for plain white rice and what makes the best Mexican rice is to add sliced green pepper and onions, then you toast the spices like comino and garlic powder then the salsina, you can add peas and carrots frozen or chopped potatoes, anything you want the best 👍😋😋🌻

USE BOILING WATER. I spent literal months perfecting my grandmothers method of making rice and using boiling water is essential to preventing crunchy rice. -add boiling water -simmer ~20min -turn heat off. Don't take the lid off. - wait ~15min and your rice is ready 🥰

@@bonitacassidy2319for TWO cups of rice, you should use FOUR cups of water. Or I’ve seen some use THREE 1/2 cups of water and one can of tomato sauce

Stir only once to incorporate the ingredients then once it starts boiling cover and turn heat to low. Simmer 20 minutes and DO NOT UNCOVER. Turn off heat and let sit 15 minutes undisturbed still covered. Perfect Rice every time! 😊

We cook our rice the same except I use 6 cups of water for 4 cups of rice and I use a Serrano pepper. I accidentally got a can of hot tomato sauce the other day. When I noticed I didn't use my pepper....we all actually really loved it lol

I never like to use tomato paste, just isnt the same, gotta use fresh tomato. Gotta also have the onions diced and garlic minced so it gets that umami flavor. And also i use the tomato and chicken bullion instead of just regular chicken bullion. And add a dash of cumin and some ground pepper. Best rice ever, especially with caldo de pollo.

The Spanish adopted a rice dish could probably be jollof rice brought to Spain by the Moors. Paella is sort of a derivative of jollof rice. But making any kind of comparisons to jollof Rice on here is fighting words to some so be careful. It's hard not to see the connection the jollof rice a red rice dish made with tomatoes introduced buy the Moors to to the Spanish peninsula the who eventually sailed across the ocean and brought their recipe of rice and tomatoes to Mexico who then came up with their own twist. But this sentence may actually get me into some serious battles. It's just food people relax. Please don't kill me for that one time I used ketchup cuz I didn't have any tomatoes in the house.

You dont need to continuously stir it if you reduce ghe temperature. Works fine, things fry at 300, they dont have to reach 350

I dont toast my rice that dark but I think why people rice sticks its because the pan isn't hot enough and too much oil make it greasy. But for sure rinse the rice.

My grandmother taught me how to cook and she told me no matter how much rice you’re cooking always put enough water in to cover the rice and use you index finger and fill enough water to come up to the first knuckle while touching the top of the rice. It always works for me, doesn’t matter what kind of pot or pan you’re using first knuckle while barely touching the top of the rice.

If ya want you can also just blend together the paste, boiled tomato, onion and garlic together. Also u can cook it longer a dryer variation.

Todo depende dónde vives. En varias partes de la frontera de Texas/México se usa el limón en el arroz. Yo nunca lo he comido así, pero si le agrego un poquito de limón a mi caldo de pollo (ó de res) con arroz! Delicioso! Yo también soy Mexicana. ☺️✌🏼

Pro Tip: use a can opener on both ends of the tomato paste can. Take the top end off, and then push the bottom lid through the can, like a push pop. It removes all of the tomato paste from the can so easily
