Amazing as usual. Proud to see Marathi recipes getting popular...thanks to you 😊. One suggestion though....when we prepare any festive or pooja food, we usually don't put Garlic and Onion in it. So no onion in katachi amti, but dry coconut and jeera powder, goda masala and kadipatta make the magic katachi amti😊

my mother used put some suji in finely sieved atta for puran poli. she used to kneed it pretty long to develop the gluten. try this way. we call the aamti as saar in vidarbha. we eat puran poli with melted ghee or milk❤

Love the enthusiasm with which you take on dishes from all across India. Please don't get me wrong on one observation. I am from North Karnataka and we usually make puran poli ("holgi" in Kannada) on festive occasions. And on festive occasions we don't use onion or garlic in any of the dishes. Hope you will feature that version of "hoornada kattina saaru" (that's Kannada for katachi amti) on your channel. Also, we eat puran poli by dipping it in warm milk containing some ghee. The amti is used to cleanse the palate in between generous helpings of the puran poli.

I am from Nashik and we also eat Puran Poli with ghee or milk and not with amti. After we eat puran Poli then we eat amti with rice or talleli kurdai..

​@@_es284we also in Southern Karnataka make Holige/Obbattu (we call it with both names) jst like this nd Katachi Amti also it is called Holige Sambhar Nd Holige Is eaten with Ghee (toppa) or milk here also Basically it is the same dish called with different names

In Karnataka, we do a rasam called “hoornadha kattin saaru” with the dal water by grinding rasam powder and coconut. USP is to add a lemon size ball of the filling to the rasam while boiling. This is a beautiful variation… How rich is our culture! 😊

The main difference between a Gujarati Puran Poli and a Marathi Puran Poli is the type of lentil used in the filling, with Gujaratis typically using Toor Dal (pigeon pea) while Maharashtrians use Chana Dal (split Bengal gram), and the Gujarati version tends to be thicker and smaller compared to the thinner Marathi Puran Poli; both are essentially sweet flatbreads with a lentil-jaggery filling.

Traditional recipe all over Maharashtra only uses wheat floor and no maida. This maida thing was added when puranpoli was comercialized.

Being a maharashtrian, I have never seen this type of katachi amti... we always roast onions and coconut to brown, vatan is always fried in tadka then add kat( left over water from dal), emli is not added basically the tadka was for other amti that is tangy, spicy, sweet varan..

Great to see the authentic recipe. This is exactly how we make it. All maharashtrians have puran yantra in the kitchen. And if you pass the chammach test, puranpoli never fails. I personally like it with lot of ghee and may be milk.

Too good. ❤ Katachi aamti Jain version me bhi banati hai and there is no much difference in the taste. Western Maharashtra ke kuch families me Bramha dev ke pooja ke liye puran poli ka bhog lagata hai, and the preparation for bhog is without onion/ garlic/ginger

Hi Ranveer , I learnt many new things Firstly I never knew puran poli is eaten with katachi aamti . I always thought aamti was a by product … will surely try it out . I had never added ghee to the puran … may be it makes it moist And our puran polis are thin and we don’t add ghee while frying We top it with ghee while eating . My mother used to cook puran poli once a year on Diwali. The outer layer of this puran poli was thinner thinner than paper. It was her specialty. We used to eat this by dipping in pure ghee. Off-course we used have . it with amati and very watery tadaka butter milk.

Pooran poli in Karnataka is called HOLIGE. It's almost a mandatory sweet for festivals and even weddings. It's usually eaten with ghee and some of us prefer it along SEEKARANE( A type of fruit salad) as well. The dal water is used to make Holige Saaru whose texture similar to that of rasam goes very well with rice! In southern part of Karnataka Coconut Holige are prevalent which are made with grated coconut instead of dal. Nowadays we have come to see a lot of varities in holige such as Groundnut holige, carrot holige.

It originated in Karnataka it's called holige/obbattu. The stuffing is called oorna. There is a reference to this dish in the Sanskrit encyclopedia Manasōllāsa in the 12th-century written by King Someshvara in Karnataka .

In andhrapradesh we call it BOBBATTU. We use only maida. Puran is called as PURNAM in telugu. In my house we do dishes made with purnam on birthdays. Our elders say that by eating it, we also get PURNA AYUSH(complete & long life).😊😊😊

Beautiful delicious mouth watering and I completely agree..puran Poli needs katachi amti...and I make Karela ka panchamrut to go with it. The bestest combination of sweet spicy bitter and tangy! Heavenly flavors 🤤
