Step 1: Make the beef
Ingredients
* 1 Tbsp vegetable oil
* 16 ounces 80/20 ground beef
* 1 tsp salt
* Oatmeal
* 1 tsp Chicken bouillon
* 1 Tbsp Hot sauce
* 1 tsp Cumin
* ⅛ tsp Black pepper
* ½ tsp Onion
* ½ tsp Garlic
* ½ tsp Paprika
* 1 tsp Chili powder
* Salt
* ¼ tsp Cocoa powder
* Water
* Premade beef
1) Heat a large non-stick skillet on high heat. Add your vegetable oil, and when it starts smoking, add your ground beef. Sautee for a few minutes until fully cooked, breaking up with a wooden spoon, then add all the rest of your ingredients, and cook for an additional 3 minutes.
2) Transfer to a food processor and pulse, 10 or 12 times, until meat is very finely broken up. If too much liquid remains in the beef mixture, then add back into the hot pan and stir until desired consistency is reached.
Equipment
* Large saucier skillet
* Wooden spoon
* Food processor
* Silspat
Step 2: Make the sauce
Ingredients
* Vegetable oil
* Diced tomatoes
* Diced green chilies
* Tomato Paste
* Water
* Salt
* Sugar
* Onion powder
* Garlic Powder
* Cumin
* Chili powder
* Corn starch
* Water
* Vegetable oil
* Premade sauce
1) Heat vegetable oil in a medium sauce pan and add diced tomatoes and green chilies. Sautee for a few minutes, until the tomatoes start to break down, then add the rest of your ingredients, excluding the corn starch.
2) Transfer ingredients to a blender, and puree until smooth. Add back into the pot on medium heat, then add cornstarch and continue to cook until slightly thickened, about 2 minutes.
Equipment
* Medium saucepan
* Vitamix
* Silicone spatula
Step 3: Assemble
Ingredients
* 2 hybrid corn and flour tortillas
* ½ cup vegetable oil
* 1 bowl refried beans (from a can)
* 1 bowl beef
* 1 bowl sauce
* 1 bowl shredded cheddar + jack cheese
* 1 bowl diced tomatoes
1) Preheat your oven to 400 degrees. Heat oil on medium high heat in a small sautee pan. 2) Fry tortillas for about 2 minutes on each side, until crispy but not overly browned. If the tortillas do not get crispy immediately in the oil, throw them in the oven for about 15 minutes.
3) Lay one crispy tortilla on a baking sheet. Add a schmear of beans and a schmear of beef. Top it with another crispy tortilla, then layer on sauce, and cheese and bake for 6 or 7 minutes, just until the cheese is melty. Add fresh tomatoes, slice, and enjoy.

This video both warms my heart and breaks it all at the same time. I had no idea they discontinued it! I was a manager at a Taco Bell in Denver Colorado for a few years and the Mexican Pizza was my favorite thing to eat on break. I would make it for myself and if you put a thin layer of nacho cheese on top with the sauce, cheese and tomato and then take a few packs of fire sauce and drip over the top.... so good. Assembling a perfect ratio Mexican Pizza is a skill that few have achieved, but those who have experienced it know it is one of the best items that Taco Bell ever had. RIP Mexican Pizza. Taco Bell gives 0 f's. They have always introduced great menu items and then snatch them away. But to kill off such an old staple is just tragic and unforgivable.

Taco Bell Mexican Pizza lovers rejoice. Since the filming of this video the retired menu item has returned. Thanks for this great copycat recipe. I will definitely give it a try with slightly fresher ingredients than they would use at The Bell. Side note - speaking of nostalgia, how many of you remember the $0.39, $0.59, $0.79 cent menu items? That's right, Taco Bell tacos used to be had for a mere 39 cents each. Terrible for their bottom line but great for your late night cravings in the early days.

You're my hero Josh. Right as the pandemic hit, my gallbladder started failing, and by June, I couldn't continue to eat a lot of stuff that I used to. The biggest trigger was anything with meat. If I ate meat, it felt like I was being stabbed in the gut with a knife. So I had to go on a forced Taco Bell hiatus. It took a long time before they determined that my gallbladder had to go, but it finally got removed about a month ago. Now able to eat meat, one of the first things I went to order on Postmates was Taco Bell. As if 2020 couldn't get any worse, I noticed they had discontinued one of the 2 things I wanted to order. But now . . . now, I can finally get life back on track. That's thanks to you. Now, if they ever discontinue the crunchwrap though, I don't know that I'll be able to eat at Taco Bell anymore. I guess its a good thing you have videos for a fancy version of that too.

I love Taco Bell’s Beef burrito. They discontinued it years ago. You can still order it and if they won’t you. You can ask for a bean burrito minus bean add beef. It’s beef, cheese, onion and red sauce. Can you teach this one and or the red sauce!!! It’s my favorite item there! Thanks love the show. Absolutely excellent! Thank you for the info on how Taco Bell makes their meat. I've tried, for years, to duplicate it and never could get it just right. I never realized they were mincing the meat with oatmeal added as a filler! And that makes sense because what Taco Bell offers is a commercialized version of what we grew up calling "Tex Mex". It's Southern border "poor people's food". And a century ago it was perfectly sensible to stretch meat dishes by adding fillers like oats or bread crumbs and mincing the meat. I'm embarrassed it never occurred to me, before. Thanks again! NOW... do the Taco Bell Bel Beefer! I used to love those back in the day. It was a kind of burger made with taco bell meat instead of a meat patty. As I recall them they had meat, enchilada sauce (I think), shredded lettuce and, possibly, tomatoes. I don't think they put cheese on them... but it's been many years since I had one. PLEASE show us how to do the Bel Beefer!

Some great tips here. That beef looked and sounded pretty spot on. And Ive always been confused about what type of tortilla they used, but the corn/flour combo makes sense now! Only thing is the tortillas you used seemed too thick and maybe a little overcooked? The mexican pizza tortillas manage to stay almost white. Dehydrating in the oven was a good trick though. They do have this texture quality of being somewhere between baked and fried. Im gonna have to play around with this recipe.

Anyone try this? How similar is it to the actual Taco Bell seasoned beef? I tried for ages to find/make a proper copy cat recipe, and I couldn't seem to replicate it. Their seasoning packets don't even come close.
