Ingredients to make 20 to 24 Thumbprint Cookies: 1 stick (1/2 cup) soft unsalted butter 1/3 cup powdered sugar (not sifted) 1 large egg yolk 1 teaspoon vanilla extract 1/8 teaspoon almond extract 1/4 teaspoon fine salt 1 1/4 cups all-purpose flour (5 ounces by weight) 1/2 cup fruit jam to fill centers - 325 F. for 15 minutes For the icing: - Combine powdered sugar with a little milk or water, and mix until you have a consistency that will hold its shape when piped.

Here in the USA we have standard measuring cups. You can get a set cheap on Amazon that will go from 1/4, 1/2, 1/3 , 3/4, 1 cup.

If it's available where you live you should try apricot-pineapple jam sometime. It's quite delicious and the pineapple adds a nice, acidic element to the very sweet apricot preserves. It's been one of my favorites since I was a kid.

I always wanted to make thumbprint cookies and when I stumbled upon your recipe... or rather, a "complete stranger's grandma's" recipe... I had to make 'em! I adore shortbread cookies, and these were not only incredibly simple and easy to make, but wonderful! I used blueberry and strawberry jams I made last summer. I did find one major flaw... the ingredients need to be doubled! These just don't last! Thank you for always adding good tips.

This gave me better understanding of crinkle cookies at well; refrigeration helps it crack, pressing it down before baking decreases cracking. (Gngrbrd crackle cookies flatten if you gently drop pan after baking.

Made this last night. We knew they would be delicious, and it looked like Chef John only got about 8, so we doubled the recipe. We ended up with 38 cookies! No regrets, we ate an insane amount before they'd finished cooling. Definitely will make them again!

I used tangerine marmalade, and the tartness contrasted well with the cookie. It was such a pretty bright orange that I didn't bother with icing or sugar. Delish!

Add “special dark” cocoa 🍫 to the dough, THEN put a maraschino cherry 🍒 into the thumbprint!! THEN add a TINY bit of maraschino cherry juice stirred into the powdered sugar icing, for extra cherry flavor!! YUUUUUUUM!!!! 👍❤️😉😍😍😘😘🥰🥰

I just bought some special dark cocoa because out of the two it was on sale. Bargain shopper here, lol. I was making chocolate peppermint thumbprint cookies filled with chocolate peppermint ganache that called for the reg cocoa. I made a batch and they came out so good but on my next 3 batches (yep, I made a lot) I used the one you mentioned. Figured it couldn't hurt. Well I can say with certainty it did not! They were better than the first batch. I also added some orange zest to the dough not really sure if the amount I used was even going to show up but.... Omgee, it took those cookies to the next level. When I can't stop eating my baked goods that's when I know I did good... 😉

I guarantee these are great the way they are but I just made them with Bob’s red Mill gluten-free one to one baking flour, and even added light colored honey Maple sugar has the sugar! I’m pretty jazzed there in the oven! Thanks I searched high and low for a month now for the perfect recipe couldn’t find it so I knew I had to find one that I could tweak and yours seems simple enough to tweak. Fingers crossed 🤞🏻

For some extra melt in your mouth with these kinds of cookies, try adding a very small amount of baking powder to them. Like not even half a teaspoon to 200g of butter. This makes them a little bit lighter in their texture, and I think that works really well. Also, try boiling some rhubarb with sugar (cutting the rhubarb into small pieces), and put rhubarb in these. The sour taste of rhubarb works really good with these kinds of cookies.

I made these today! The dough cracked a bit, but I'm sure that's because of something I did -- I don't think I incorporated the flour and butter mixture together well enough ... because I got tired of stirring. That's my fault for pulling the butter straight from the freezer. :P (Also, the fact that I used bread flour instead of all-purpose flour probably didn't help!) Nevertheless, the cookies turned out fantastically tasty -- even with ordinary storebought grape jelly! I recommend this recipe and will try to make them again.

Vaylon Kenadell it happens but a little tip to less cracking is to roll the ball out and as soon as you roll your ball make your indentation right away instead of rolling them all out at once. I hope that helps. I also have a thumbprint cookie video😊

Oh yeah, it was probably the flour then. The recipe I had for these called for cake flour, which has the least gluten of all! This one shows that all-purpose flour can also work (and probably just fine), but going to the opposite end of the spectrum with bread flour might mess with the texture/bake

I've grown up in the kitchen. Idk if I loved the food or the time alone with my dad daily. For my 7th birthday I got a formed knife, fit for my little hand. I knew my dad only used the best, but I had no idea what Wusthoh was, 33 yrs ago. My whole life my dad saved a present if it was really special and after all opened, he'd come out and have tears flowing down his face. Thank you for all your amazing vids. I am smart, 2 master's (MBA, Marketing) BS Accounting, but hated it. I was a waitress for 10 yrs at the same steakhouse. After these degrees I went back but I've had too many crazy things happen to my body and can't be a low level person in a restaurant. I've done every job in that business. I went back after 5 yrs out to a dishwasher/ prep. I love it, I wish I'd done what I wanted in life... Culinary school. I owe too much so I've really appreciated all your vids. I look for whatever and I come across yours. Thanks so much for all your help.

Tried this recipe yesterday. After 3 batches, it turned out beautifully. One suggestion, the cookie spoon is too small for the recipe. Coffee spoon is the perfect size for the final product. I brought them to the church for cookie exchange. I wished there is some left over for me. But by the end, they are all gone. I will make some for my friends and kids this weekend.

I made these today to put out for Christmas Eve. I did break out the stand mixer because I was already making cupcakes anyway and I was too lazy to hand mix these. I went for the first variation (less jam). I followed the instructions exactly in the video and they came out beautifully! Yessss! Those are my favorite Christmas cookies and I'm making them every year just like my mom when I was a kid. I'm so excited to see them here on foodwishes! My technique is a bit different, though, (I never thought about using a spatula for this, I always use my hands. xD and the jam goes in after the baking) and I always make a ton of them to store over the whole Christmas season. XD in Germany we're calling them "Husarenkrapfen ", because they kind of look like the buttons on a hussars uniform, or "engelsaugen" which translates to "angel's eyes". Thanks for bringing this recipe to everyone! They are truly a Christmas delight!

Five years on from this comment and I've been making these every Christmas since. One of my favorite Chef John recipes ever. Going to be making a hundred of them tomorrow, half filled with raspberry jam and half with lemon curd. They're always a massive hit.
