Simple recipe for making Fried Chips at home:
Ingredients:
4 large potatoes
Vegetable oil (for frying)
Salt (to taste)
Optional: pepper, paprika, or other seasonings
Instructions:
1. Prepare the Potatoes
Peel the potatoes (optional) and cut them into thin slices or sticks (depending on if you want fries or chips).
Rinse the potato slices in cold water to remove excess starch. This helps them crisp up better.
Pat the potatoes dry thoroughly with a kitchen towel or paper towel.
2. Heat the Oil
Pour enough vegetable oil into a deep frying pan or pot to submerge the potatoes. Heat the oil to around 160°C (320°F).
3. First Fry (Blanching)
Fry the potato slices in batches, cooking them for 4-5 minutes until they are just soft but not yet golden.
Remove them from the oil and place them on paper towels to drain.
4. Second Fry (Crisping)
Increase the oil temperature to about 180°C (350°F).
Fry the potatoes again for 2-3 minutes, until they turn golden and crispy.
5. Season and Serve
Remove the chips from the oil, drain on paper towels, and sprinkle with salt (and any other seasoning you like).
Serve immediately for the best crispiness.
