“Bread” (1960) is a color educational short film from Encyclopædia Britannica Films Inc. in collaboration with Dimitro Bourandas Ed.D. of Dearborn Public Schools. The film, which was approved by the American Institute of Baking, depicts how bread and other baked goods are made starting from the grain harvest to baking in the industrial ovens of a bakery - or in this case, the industrial baking facilities of Livonia, Michigan’s Awrey Bakery.

Close-up woman cutting cherry pie, vintage wrapper for Awrey’s Home Made Dutch Bread (1:05). Young boy stands next to father and stuffs face with freshly grilled hot dog (1:09). Stalks of wheat wave in wind in big field, men operate Cockshutt Combine Harvesters in wheat field, another man operates Massey Ferguson combine harvester (1:25). Close-up POV as combine part of engine moves through field and cuts the stalks (2:03). Close-up back of combiner as stalks are blown from rear of the combine (2:11). Harvested wheat flows out of storage bin on top of combine and flows into basin of truck (2:23). Exterior shafts of grain elevator (2:36). Two men observe as grain unloaded from basin of truck and sifted into pits at the mill (2:44). Wide conveyor belts in warehouse carry grain to industrial machines that turn it into flour (2:51). Close-up of grain passing through sharp rollers of milling machine (2:59). Industrial sifting machine at mill, close-up of fine white flour (3:07). Awrey Bakery street sign with miniature Dutch windmill (3:16). Young boy, father from film opening observe process at bakery bread making steps: flour sifted through mixing machine (3:23). Essential ingredients measured, portioned out on table with cards describing what they are - water, yeast, sugar, shortening, vitamins (3:52). “Sponge” or large doughy mixture comes tumbling out of industrial mixer, wheeled into warm room in tin cart, close-up of sponge as it bubbles and yeast causes it to rise and swell, baker punches holes into sponge to release gas (4:00). Room of sponges that have swelled and expanded (4:49). Divider machine cuts dough into loaf-size pieces, close-up of cut dough on smaller conveyer belt (4:57). As dough passes along conveyer belt flour added, shaped into balls, placed onto baking sheets where it is left to rise once again (5:08). Bakers in all white outfits, aprons transfer baking trays with bread tins into large oven (5:39). Golden brown bread comes out of oven, conveyer belts carry finished loaves to cool and slicing, wrapping machine (5:49). Close-up sliced loaves as they leave slicing machine (6:12). Fresh packages of bread - yellow paper with retro Awrey logo featuring Dutch windmill, package reads “Awrey Homemade Enriched Bread” (6:22). Men and women knead, braid dough by hand, form them into pastries and coffee cakes (6:29). Women stand at different points of cake assembly line, add frosting to cakes (6:47). Bowls with different colored frostings (7:00). Hand piping of decorative details onto cakes (7:04). Pie assembly line - more women stand at different parts of station and help prepare pies, one woman scoops cherry filling from vat of macerated fruit (7:18). Aerial view fruit scooped into pie shell, lattice top of pie placed on top (7:26). Pies baking in oven (7:39). Creme puff assembly line - men and women stand along conveyer belt piping creme into pastry shell (7:54). Baker holds up large brick of Hershey’s chocolate - melted into frosting, coats eclairs (8:06). Different industrial machines at bakery that replace human hands: mixing machine, dough rounder (8:26). Donuts dry in hot shortening before they ride up and down on cooling conveyor, finished donuts filled with jelly by another machine (8:55). Finished baked goods on bakery racks line wall (9:55). Awrey Bread truck delivers goods to grocery stores, bakeries (10:17).

Ingenious Americans made these automatic machines to keep up with the growing demand for bread products. People of such caliber had a minds eye and a mechanical understanding of what they saw in their minds eye and could make it a reality in collaboration with other talented people.

Awrey couldn’t survive the changing times. use to love the windmill cookies when I was a kid. And the danish just a few years back. Back then I see they were located on Tireman ave. Interesting.

From last August... "After 113 years producing cakes, cookies and pastries, Awrey Bakery in Livonia will close next month, according to a notice filed with the state."

9:12 demonstrates the donut embalming pump (LOL) and although Krispy Kreme doesn't want you to know it, the hardware at 9:22 works in exactly the same way as their donut ring extruder. Unlike Krispy Kreme, however, these donut rings go directly into the fryer and Krispy Kreme sends the rings through a proofer box that works exactly the way the cooling rack at 9:00 demonstrates. Immediately after the proofer, the donut rings proceed through a fryer identical to the one we see here.

@@gavocrazy I realize this and this is whats wrong with the 21st century. Too much focus on all the Earthlings having to interact every 250 milliseconds on frivolous things on social media platforms. And hence too far removed from the real world and specifically NATURE AND THE LAW THAT LIES THEREIN. I like the 21stcebtury as a life long student.
