OMG! Made this today, and it is the most delish pie I have ever tasted. You made it so easy with your straight forward instructions too. Love this! I add a sprinkling of salt and pepper, a couple of tablespoons melted butter, and a splash of whole milk to the mashed potato mixture. I also use a springform pan. Fabulous!

Pete, always use COOLED filling in pastry. This is to prevent the shortening from melting prematurely. You get better flake on your pastry top, and the base won’t sog as much.

Thanks for the pie idea. My local Bangkok pub is putting on a Christmas dinner but no vegetarian option, so I'll make this and take it along. I'll bet what I don't eat will be snatched up. I love the star design -- never tried that before. A couple of years ago I instructed the pub cook how to cook fresh brussels --- I told them to boil them for 5 minutes,no more till they are al dente. I just stopped them boiling them in oil!

Very Good, I'll make another, but since only med. Potato's avail, and go from 3 to 5, also as suggested another puff bake sheet, for my glass Pyrex 1.4 Lt (Oven settings at 10:43 mins). Definitely quick comfort food

Sweating the leeks in butter makes them sweeter and reduces the water content a little intensifying the flavour.

Agree. Personally always use veg. oil (cheaper) but braising leeks with oil and a stock cube and reducing water is a standard veg.

Simple ingredients and what a fantastic result! I'm definitely going to give this a try, it looks delicious. I was worried that the base might not cook. I've seen some people, when they make pies, they bake the base a little bit first before putting the filling in to avoid this. You didn't do this so I'm going to follow your recipe to the letter and fingers crossed, the pie will turn out perfect like yours - no soggy bottom, lol.

I have since taken to baking this pie in a steep-walled spring-form cake tin, and the results are very good because you can cram in more of the delicious filling, and the bottom comes out firm and crispy. It is also a great filling for pasties and turnovers or slices as they are sometimes called in the UK. To some extent the soggy-bottom is desirable here in the UK, but it is not liked by everyone. Pasties and turnovers eliminate the soggy bottom entirely.

Cayenne pepper is good for heart rhythm and it adds a delicious piquancy, I love it. I stuck with tradition here, but I'm a real peppermouth too 🌶🌶🌶

Hahaha I know what you mean Lisa. It is a classic for sure, the sweetness of the leeks and the deep umami flavour of the cheese mingle with the potatoes and the yummy crust to make this a superb picnic pie, without any embellishment. In any case, with our weather _finally_ going from scalding hot Summers (up to 48°C, even 50 sometimes) to just temperate this week, I thought I'd make a pork pie or a potato, cheese, and leek pie some evening here and have it the next day as a picnic pie, and thankfully was able to re-find you again. And don't you just love the term "picnic pie"? I certainly do! Tah-tah! 😊
