Hey I got bubbles when I soaked white pumpkin with lime .does that mean it’s spoiled???or harmful to health??

You mean bubbly water...normally it doesn't turn bubbly. Have you ensured lime is not too much...and you are using lime (choona) which is used for betell leaves or paan. Edible lime does not cause any health issues provided it's not too much. Wash the pieces thoroughly with water .

It need not be refrigerated till seven days. Better to refrigerate beyond that.

Nothing that I am aware of . Lime powder is used to harden the ash gourd. You can try to get it online.

Thanks for sharing your views. On your comment I did watch her kesar petha recipe. Her recipe does not include boiling petha twice and neither is petha kept in sugar syrup overnight. And so I would be surprised if it is any sweet from inside. Thanks for writing.

For me rose water gives the flavour and removes the taste of ash gourd. So I would say it's good to use, but not mandatory. You can taste the petha and decide.
