Yasuo's ult has always done that. I think it's to show, like, the target is being struck at different angles each time Yasuo strikes. Idk it's hard to explain it but it's easy to visualize what they were going for. It's not like it matters to much anyways. It's probably just a visual effect and the character is still facing the direction it was facing before they got airborn for the purposes of directional abilities like Cass R and Trynd W. Skarner R also makes his character face the direction he's moving despite his model facing the target he ulted.
