Pro chef here. Trader Joe's taco seasoning is amazing! I hate admitting that because I'd rather make my own. But their packets really are legit
@littlefrank90 Жыл бұрын
Man I'm from Italy and they don't sell that seasoning here so I make my own. Still delicious but now I'm dead curious. What I use: - Salt - pinch of sugar (to reduce the acidic of the tomato sauce) - bit of wite wine - a spoon of barbeque sauce (to give some smoked flavour) - my own fresh scorpion chili peppers - teaspoon of msg (monosodic glutammate) - pepper

I recently became a widower. As I was cleaning out everything, I got hungry and found 12 Old El Paso Taco shells, enough of frozen ground lamb, a just ready heirloom tomato, sharp cheddar, a jar of Italian roasted red peppers, romaine lettuce and a Mexican spice mix. Lonely isn't the word for it. Followed your recipe and gorged on a simply made meal for pennies. I miss my friend. Much love brother. 🐠

Tip for opening a tight or troublesome jar... Submerge in warm/hot water, lid-side down for a minute or so... But for a quick an instant result, but be careful not to smash or break the jar. On a flat surface, chopping board, counter top or the like... Bang the jar, down on its lid, trying to do so as flat on the lid as possible and not at an angle, else you'll possibly break the jar. One strike should do it, but two strikes, flat on the lid for good measure, & its guaranteed to open with ease, works everytime 😉

I make some decent low fat tacos. I start with 1.34 lbs. of 93%/7% ground beef, cook it up, drain, add the taco seasonings (I use El Paso but that's entirely up to you), cook until thickened and let cool. Then put I put the meat into a container and put put the meat into the refrigerator to keep the flies and other vermin for contaminating it. I cut (diced size) up 2 whole small tomatoes or one very large red ripe tomato (if available, Jersey tomatoes or any other tomato that is red and tastes like a tomato, if possible) and a whole medium yellow onion. I then put the tomatoes and onions into a container and then into the refrigerator to keep the flies and other vermin for contaminating it . Then I take a 15.5 oz can of Goya Habichuelas pink beans. I dump them in a bowl and smash as much as I can with a potato smasher. I put the smooshed beans into a container so nobody spits into my project. I fill the empty Goya can with taco beef and cover with plastic wrap and rubber bands so nobody can come by and spit into or on my meat. I measure out 1/4 cup of water then cover so nobody can come by and spit in the water. Measure out 1/32 of a teaspoon of garlic powder or 2 cloves garlic, pressed or minced, cover so nobody can spit into or on your garlic. I cut (dice size) a half a RED bell pepper and cover so nobody can spit on my peppers. Making the taco or burrito filling: Spray a 14" diameter non stick saucepan with non fat canola spray. Turn the burner to the highest setting possible. When hot (you want that baby crackling when you add the peppers and onions) add the red bell peppers, and an equal amount of the chopped onions (If you use minced or pressed garlic, throw it in now). Be sure to uncover the ingredients BEFORE you cook them! Fry on high until the onions are sort of brown, not burnt, translucent and soft. Lower the heat to medium. Add the smooshed beans, can of taco meat, garlic powder(if you don't use minced or pressed garlic) and 1/4 cup of water. Add a pinch of salt and pepper (not too much!). Simmer while mixing all the ingredients well. Keep simmering until the mixture starts to thicken, 10 minutes more or less. When done put the mixture on taco shells or burrito tortilla, top with some of the diced sized raw onions, tomatoes and taco sauce if desired. Be sure to put the unused portion into a tightly sealed container and put into the refrigerator to keep the flies and other vermin for contaminating it . You can add or substitute anything or adjust proportions (hopefully using math) but basically some kind of beans, peppers and onions (similar to refried beans). If you want it to be more vegetarian or vegan, don't add meat. Have a few drinks and you'll never know the meat is missing. Or, you can use ground chicken, cubed chicken, turkey, pork, deer, horse, rat, squirrel, rabbit or any meat you desire for the taco meat if you use meat. If you don't worry about fat content you can add cheese, sour cream or fry with olive oil or add a tablespoon of olive oil to the bean mixture, anything you want. You can substitute large lettuce leaves for taco shells or burrito tortilla if you worry about carbs. It's nice and pasty so it doesn't fall out like taco meat alone. The world is your oyster! Enjoy. If you eat 6 or 7 you may become a bit "gassy" so don't forget to share that with friends!
@TravisBiggie4 жыл бұрын
looks good, but i think the diced tomatoes changes the profile/taste of the beef. its almost a sloppy joe taco at that point. onions&beef only though are perfect. I am going to safeway tomorrow for the salsa.

i'd cook it on a frying pan, and really maillard the meat for extra flavour. You could also whip up a guac with a little garlic and creme fraishe while the mince is simmering. Some of the trick in those spice bags is monosodiumglutamate MSG, which you can also buy as a powder.
@kavalogue3 жыл бұрын
Simmering minced beef for 40 minutes is the most wild unnecessary thing I ever heard
@emilguldmann68163 жыл бұрын
@@kavalogue who said 40 minutes? U put it on highg heat, spread the mince, hack it a bit with ur spoon or spatula, then let it sit a few mins untill it gets browned, flip it and let it sit again for a couple minutes untill browned. If you have a lot of meat, don't crowd the pan. let it sit on a plate untill you are ready to proceed to add flavour and sauce. Otherwise you are just boiling your mince and it will just become gray and chewy.
@High_Priest_Jonko3 жыл бұрын
@@emilguldmann6816 When you cook the beef, it releases its water. So when you move the beef around before the water evaporates, it reabsorbs that water. That's why you need to let the beef sit and brown before crushing and stirring.

What do you do with the grease from the ground beef?

Pour out so meat won't be greasy depending on what ground beef you get

I thought I was the only person thinking like you cause my neighbor has cats and when I saw how she let them jump on the tables and counters around the food I never ate anything from only because I be thinking of cat hairs being in it lol

@@survivalmode666_ I guess thats just how things are when you have pets? Have you ever adopted pets before? Cats or a dog, that fur is gonna be EVERYWHERE haha. But I totally get it. Pets arnt for everyone. I grew up having pets my whole life and I guess im just not trippin off it like some people are. We clean all our surfaces before and after cooking. We also take our shoes off before we walk in our house but you'd be surprised how many people will freak about about a cat on the counter but throw their feet up on their couch with their shoes on lol. Or own a dog and walk it around the neighborhood then let it run around the house or jump in bed with them without washing off its feet. You'd also be surprised to find out how clean cats are compared to other animals and even humans. Thats one of the reasons cats dont need to be bathed like other animals. But hey. Some people just dont like cats. I get it.

Andrew N the answer is he preps food on that nasty counter and then cooks in the stove, either way is disgusting

Nice, the only difference is that I used blended up home grown tomatoes and chillies into a sauce that I then simmer with the meat. Found that small metal taco stands are ideal for loading them up and then sticking them in the air fryer to crisp up!

The handles on my stove have the bigger part as the pointer. Not the skinny part. I know its seems backwards to me too. Its what I thought when we moved into our apartment and even tried to flip them but they dont stay on when they are flipped around. I thought other people would be confused as well so I made sure to VERBALLY say what I was doing for that reason.

@@PhilipLemoine I'll make sure I blame you & your backwards stove the next time my wife yells at me for burning something!
