BULAD. Or Daing. Dried fish is something that I've never been able to eat, so I challenged my fears head on.
My journey starts at the source of Lake Mainit, coming down to the lake and finally buying some bulad from a street side vendor. Then a trip through Mindanao to Davao, where I finally try out various types of bulad!
I think I finally found the secret for first timers: Escabeche!

7:54..well well well.. oh my goodness.. what are you doing in a high risk unrepaired bridge? That's so tricky buddy and the reason why the dump truck diverted its path. Do you want your truck to fall down in that bridge and be like keanu reeves jump off a building in the movie "matrix".. "What you know you can't explain..but you feel it.. If the bulad is too salty you can soak it in water to draw out the salt and wash it, pat dry before frying. Use a vegetable oil with a high smoking point. You can also cook it a la bacalao style with chickpeas, tomatoes and garlic.

Hey Kumander! As per the wife, you want to fry the dried fish in the future with a high-temp neutral oil (palm or veg) - and not olive oil - for a short period to avoid the bitterness and burning the fish. I personally eat them with plain rice and vinegar, plus a dash of chili oil to cut down on the oiliness. As the others mentioned, spiced vinegar is one option to try - another would be Chinese black vinegar.

Hii KD bulad is life here in PI together with bahaw (left over rice) or with newly cooked rice dip in sinamak vinegar with lots of different spices...hhhmmmm yummy

You are a braver man than me my friend. The smell alone is difficult but Filipinos including Jane love it. I'll try soon I'm sure. It's one of those things you can always smell cooking in the provinces 😊

hello kd! i’m originally fr kitcharao and moved to cebu city. pijanga and bugwan fish 🐠 are abundant in that vast lake mainit . thank you for documenting this area where i was born. it brings back so many memories. laag pa more!!! ♥️♥️♥️♥️♥️💜💜💜

You should wash first the bulad before you fry it then make it scabeche with a lot of sugar, it's delicious

KD, I'd rather eat fried dried fish with chopped tomatoes only because it cuts down the saltiness too, it's the easy way, and with fried garlic rice you're good to go. Well, some Pinoys like vinegar & chili pepper. But what you did with it by cooking it with sauce was awesome. 👍

Wash the bulad with water a couple of times or better yet soak for a few minutes to lessen the salt before cooking. To much salt may cause your blood pressure to rise.

Bulad are meant to be eaten with rice. They are too salty to be eaten as is. The rice will dilute the strong taste of bulad. If the food has strong taste, then it is meant to be eaten with rice.

Kumader, my way of eating bulad after frying is to immerse it in vinegar filled with sliced onion and minced garlic and after few minutes, Presto! The smell is gone but the taste remains. Another way is to fry it with sliced tomatos, minced onion and garlic. So yummy with cold rice.😁

Kumander. Buy a cooler and strap it at the back of the truck. Thats what I do. Fish and bulad tend to really smell inside especially if the AC is on.

When you added tomato sauce that is very similar to Spanish Bacalao which you can make out of big salted fish like rompe candao we call in Zamboanga.

wow oh we are really happy youll try bulad or daing. It will taste awesome when you overcome the smell, its delicious especially if you partnered it with garlic fried rice, or have it with soda or something like our brother are having in the visayan region oh my: dont feed the dogs with bulad!!!

As a student of Mainit National Agricultural School (Magpayang, Mainit) we usually have for viand either fried or paksyo na pijanga or saguyon. It was in Mainit that I also have a taste of crocodile meat - a kind of red meat that were sold on the streets during those days (late 70s). Dried pijanga and hayo-an were not in style yet during my stay at the school. While bathing at the lake, one can sometime see small crocodiles like they're learning how to swim. The lake, which is the second largest in the country, if my memory serves me right, was teeming with several species of freshwater fish during those times. I miss those days!

I love dried squid, the dried fish is not my favorite... quiet too salty. But would never cook it the squid in oil 😃 Just cook it above some open flame or in the pan without oil. Then strip it in slices and dip it into your dip or my favorite dip: lemon, salt, chili.

I used to live near lake mainit, i live in Kitcharao, Agusan del Norte... there is also a hotspring at Municipality of Santiago called Mapaso Hotspring. There is also a legend that Camiguin Island is used to be from Lake Mainit. Fish found on lake mainit are Red Giant Tilapia, non-endemic since it was introduced by BFAR, there is also big head common carp, pejanga and casili (giant eel)

Soak the dry fish with vinegar for a day and then cook it ,it will take the fishy smell away or breaded after a day soak in vinegar it taste like fish chips

Nice one Kumander D😉 Are there no coconut vinegar in your area that you use that white one instead? it’s preferable to use organic vinegar, the taste is a little sweet and not so acidic. You travel a lot in the provinces, buy coconut vinegar from there. Hehehe you over fried all the bulad. Next time have Nhel fry it. The meat is so thin that you don’t need to fry that long and just regulate in low heat so also to prevent from over frying. That’s a good option for you to make a sweet and sour with it or just sauté with onion, garlic and lots of 🍅. Bulad is best eaten with rice but it will make you eat more🤣🤣🤣 have Nhel prepare it with you then eat with her. She knows the combination for breakfast, rice and fried eggs with either hot choco or coffee. Vinegar dip on the side made of the spices you had mixed….

When cooking bulad, always drop some slivers of ginger in the cooking oil. Somehow, it lessens the stink around.. @Nhel Plummer and @Kumander Daot
