In the US, city folk do not know that the food they eat is OLD whereas, the food market, the animals were killed that day. I grew up on an Indian reservation in Arizona where we butchered our own meat. Drying the fresh meat like that makes the meat taste better. OH! Our produce is irradiated. Our eggs are weeks, a month old so refrigeration is a requirement.
