Social Club Rooftop bar at Hotel des Art. It's right up there in the top 10 but my goodness the rooftop bars in HCMC. I'm not a bar type of guy but I really enjoyed the vibe here. Very classy.

I think fine dining have its place and pho in fine dining is definitely and rare thing at least for me. I'm glad you enjoy the experience though.

Been waiting for this review for a while. It did not disappoint. I find it funny that a lot of Vietnamese people would say that bowl is a waste of money, but then a lot of the same people would have no problem wasting money on luxury brand goods / cars or taking shots of cognac.

I'm 100% with you. Not willing to pay that price tag just because Pho is a Vietnamese dish but would spend $200 on a Wagyu steak no question asked. It shows Vietnamese people put a low value on their own dishes compared to other cuisines. At my restaurant I'm very fortunate to not have this situation. I offer a premium experience and yes occasionally I get some OG Viet's who don't understand this concept , they'd come in and complain about the price tag.

Is Ron an actual Chicago Cubs fan? I was born in a suburb of Chicago. When my parents first got married they lived in one of the apartments on Sheffield street (the street that runs right behind the drunken bleacher bums that would fight for the balls 🤣). Also the true fans are parked drinking beer on Sheffield and/or Waveland outside the park catching those homerun balls. Well my parent would sit up on the rooftop apartment and watch the games.

I dont understand the choice of wagyu for rare beef. Wagyu has too much high fat content, so it doesnt render with the hot broth pour over it. Usually Vietnamese choose a lean cut for that reason. They should have gone for something like aged australian scotch or rump aswell.

my partner feels the same way as most viets about your db pho , too expensive waste of money etc etc, i however dont mind the splurge for high quality stuff

Look I get it and not every customer comes in for those crazy bowls here. But the majority do and I've been fortunate to have that following because it's not easy to pull that off. At Landmark they have 1 option, that's it. That's their business model but a mid range bowl couldn't hurt.
