The demon Hecate is suppose to have a human looking child. I'm guessing Phoebe saw it's true nature or it wasn't in it's human form. Plus doctors r trained to endure the sight a deformed baby (e.g. kids with gentic defects and stuffs) but here they couldn't hold it in.
