What is that scratch called at the 48 sec mark? Every Deejay does it but I've never seen it explained.

It's a double click OG Flare I believe mate. There's two clicks on the forward stroke and one on the back stroke where the pull back is semi audible. That's what makes it an OG rather than an Orbit, which is a more symetrical move. OG's also have a bit of a push to them. Just before that it's Chirp Flares or Reverse Chirp Flares.
