These videos are mesmerizing! I am from Sri Lanka and am really interested in subtle differences of Indian food even if sometimes they visually look similar. Would like to ask from Bengali food enthusiasts, whether inclusion of sugar in curries (Even, fried rice) a signature of Bengali cuisine - just like coconut milk in Sri Lanka? I'm just curious. Mohamed Athif yes and no. Historically, people from the west of hoogly river (ghotis) tend to use sugar and those from the east (bangals) don’t. But over the years due to migration, one style has affected the other. Also, sugar is not used to make the dish sweet, it is used to balance the flavors and hence added in tiny amounts. This technique is not unique to bengal, but is used in many world cuisines.

You should use tsp/tbsp/cup measures when you can. Grams is inconvenient and not everyone has a weighing scale.

Reason is we Bengalis mostly don't use onion and garlic in veg dishes except some cases. We use onion and garlic mainly in non veg items. Also while preparing fish with mustard paste also we won't use onion and garlic.

Everything is great but the quantity of suger should be less. Not for only this recipe but for many other dishes too. Bengalies dont use that much suger, it needs to be 1/2 pinch just to balance the taste.. Thanks for all your videos by the way❤Keep it up😊
