Looks so delicious and you make it seem simple and achievable. Reminds me of the ‘paposcia’ i used to be addicted to when visiting Puglia, except that required a pizza oven, with the dough sliced in half to insert that same perfect filling you used. Yum. I’m absolutely going to make this!

Hi Marina, They really are best cooked and eaten straight away, but if you were to make a batch ahead of time, I would fit them as once they cool, they harden so it is difficult to fold over. Then just put them in a sandwich press or heat in a pan before serving!

Thank you so much! They're by Fasano ceramics, from Italy! Look for 'Splatterware' when searching. These particular ones were from Simon and Johnson!
