Nice! I was always wondering why ppl learn to play some instruments by this way? At the same time, that was a reason why I'm started to listen some of musicians on YT, and TW over the years.

Learning music with a pitch detection note highway is fun and can be relaxing - really helps with finger dexterity and learning what fingers to use. I have to make sure to then play without looking at a note highway and use memory and ear more. An in between step I like is to have a one page tab for guitar or one page sheet music for piano.

would you recommend this for an intermediate player? Does it have actual learning value that carries over or is it more like guitar hero

Yes I recommend Rocksmith+ and also Yousician for learning piano, guitar, bass. They allow you to use real instruments and are great for beginner, intermediate and advanced. Guitar hero did not allow you to use a real instrument. Rocksmith+ piano I really enjoy because the various midi sounds for your piano and the graphics and controls of how you practice are wonderful. You can break songs down into sections and practice at any speed. Learning how to place your fingers. This video is a very very easy beginner lesson. There are tons of complicated beautiful arrangements, pop and classical.
