Ingredients:
1kg cassava, grated
2 cups white sugar
4 1/2 cups water
2 1/2 tsp lye water(Lihia)
1/2 tsp salt
Food color & Flavor
1/4 tsp ube flavor
1/2 tsp violet food color
1/4 tsp buko-pandan
1/2 tsp green food color
1/4 tsp strawberry flavor
1/2 tsp red food color
1/4 tsp banana flavor
1/2 tsp yellow food color
2 cups Grated Coconut(1 cup cheese)
Procedure:
1) Squeeze out the liquid from the cassava
2) Combine cassava, white sugar, water, lye water and salt
3) Mix it well until sugar dissolves
4) Optional: Divide mixture into 4 equal parts
5) Add each part food color and flavor
6) Pour 1/8 cup of the mixture into the lightly greased molders
7) Steam for 45-50min. or until translucent
8) Cool pichi-pichi completely
9) Remove pichi-pichi from the molders
10)Coat with grated coconut
