There are so many cheap/good options that were missed. Corpse Knight, Teferi's Honor Guard, Azorius Knight-Arbiter, Mirran Crusader, and a bunch of others that have protection from stuff. Moorland Rescuer might be another reasonable include, but of course much of this is very dependent on what the deck is trying to do. Does it make tokens? Does it do protection? Etc. If we're going for novelty, there's a cheap Legends card called Headless Horseman that has been eratta'd to be a zombie knight.

It shouldn't be difficult to get Haakon into the graveyard in a Sidar Jabari of Zhalfir deck - its eminence ability allows you to draw and discard cards

Counterpoint- don't pick up any mildly expensive knights before the precon gets revealed, they are likely to be reprinted in the precon and plummet in value.

Hopefully "Teferis Protection" is in the precon knight deck. That would make totally sense. But I guess that we see some new great knights within the deck and maybe some classics like "Fiendslayer Paladin", elemental knights from M20 or "Mirran Crusader".
