I need to go to China one day. Every time I see a Chinese person, I want to speak Mandarin with them to practice, but I don't want to give the wrong idea. Plus, they might not even know the language themselves... Which might be slightly awkward.

Don't worry too much about it. If you speak Chinese(even really bad Chinese) to an overseas Chinese you'll basically blow their minds. I recommend doing it in Chinese restaurants.
