Do not throw away watermelon rind! Try this recipe for some delicious, sweet and spicy pickled watermelon rind.
Pickled watermelon rind tastes great and they are a tasty addition to different salads and can also be turned into a relish or chutney and served with anything you want to add a touch of acidity and sweetness. #watermelon #pickle
Ingredients:
4-5 cups of cubed watermelon rind
1 1/2 cups of water
1 cup of rice vinegar or apple cider vinegar
3/4 cup of sugar
4 teaspoons of salt
6-8 cloves
1 stick of cinnamon
1 inch piece of ginger
1 teaspoon of red pepper flakes

Made your sourdough bread toast with avocado, watermelon, watermelon rind pickles and all. WOW! Absolutely delicious! I use a slightly different pickling recipe and can them as my grandma did in the '40s & '50s. Had never tried combining with avocado. Many thanks!

YESSS BEEN LOOKING FOR THIS! We doing a fruit diet for this last summer month and I'm getting the recipes ready we gonna try watermelon burgers too! thank you! Forgot to add we have type 2 diabetic in the house is it safe to make these with splenda\artificial sweeteners?

dig the recipe and glad you mentioned the sour dough bread toast --i'd think that apple cidar vinegar in recipe would taste great with avocado toast and rind recipe. And great accent! it reminds me of a great friend in college who's from Brazil..an instructor and now a gym owner in Dallas.. More recipes segments to come i hope!

Cloves are a spice, they are the little black dried flower buds from the clove tree.

Too many flavors and you never want to boil something so soft after you peel it so don't peel it or don't boil it you don't boil that it'll become too soft you want to boil your liquid like pickling and then pour it over your product..
