I've never really worked with cauliflower except with steamed vegetables. This looks interesting. A tip, if you don't mind. When filling jars, I use a dinner plate topped with a folded paper towel. Jar to be filled sits on the towel. Plate and towel catches spills. Side of the plate is a good resting place for tools between uses. After filling jars, clean up is easy. Toss the paper towel into the trash and use the plate to hold the odds & ends to be washed afterwards. This keeps the counter clean and avoids stains on a mat, as well. Thanks for sharing. God Bless.

My Dad used to like a hot veggie mix. It had cauliflower in it. I remember he liked to eat it with his breakfast. I do miss him.

Just a helpful hint. When you get too much water in the canner, just dunk an empty jar in the canner til it goes over the rim. When it fills up, you can empty in the sink. That way, you only have to remove one jar of your product and don’t have to lift that heavy pot. Hope that makes sense.

I'm so happy to see you canning the cauliflower. I love eating it pickled but the only variety I can find in the grocery is hot, but I prefer mild and/or curried cauliflower. I've ordered the spices from Azure for my next pick up and I'm determined to can some of my own now. Thanks for showing me how!

looks great - I love cauliflower and this would work for me. Maybe add a small amount of dill and make them dilled cauliflower. Experiment time!!!!!!!!!!!!!!!!!!!!!!

There's my girl! pickled cauliflower is one of my most favorite things in the world!! :-) I can't do the jalapeno but the other two sounds delicious and I love curry as long as it's not hot spicy. If it is I can take it out. I love spice but I have a geographic tongue so I can't do it.

Was wondering what you were going to do with all that cauliflower you got! What a great thing to put up. I remember as a child we always had something pickled on our plate at dinnertime and it was usually cauliflower. I haven't attempted this yet but have been wanting to try it! I've been finding I really prefer the FORJARS lids but also have a variety I need to use up!

jenny -- i just made a major pur jar hall with some ball jars --are the pur lids sealing --also have heard many bad things about ball lids failing --so the question is do i use the pur lids and should i junk the ball lids?--got a major hall from fourjars -- input would be helpful as i am just starting to get into canning! :) thank you for any input! :):) also where to get a heavy duty stock pot -- do you have some recomondations(sp) :)

It keeps it more firm but certainly not crunchy, you would have to do a quick pickle in the refrigerator as opposed to canning them!
