Andrew, I enjoy your videos. I used to smoke sturgeon dry like that. I soaked it in a brine made of water, soy sauce, salt, brown sugar, garlic and pepper. I'd let it soak overnight in a 5 gallon bucket and put it on the smoker the next day. It would usually take a whole day to get it dry enough, but it was good. I like smoked fish. A five of diamonds Daredevle is one of my top pike lures, they seem to like it.

Hey good fishing Andrew ever try keeping the fillets whole ? and just lightly cube the whole fillet in about a inch cube pattern scored with knife half way through thats how the good folk do it with white fish up north back home up north in fort chip Lake athabasca delicous! Also i tryed smoked recipe like yours but with brown sugar hotsauce and soya sauce and a hint of pepper alil salt soak fish in the brine for a day Put in the smoke house good stuff smoked Canadian Candy eye pike!

Nice! I have a recipe I like to use with my electric smoker. Give it a try if you like: 1) Fillet fish into 4" by 4" chunks, with the skin on 2) Cover them in salt in a bin, every square inch. 3) after 30 minutes, rinse off each piece and drain (don't go much longer than this!) 4) throw them into a container, and cover them totally in brown sugar. Throw in a good amount of course fresh ground pepper and mix. 5) Leave in the fridge overnight to marinade 6) smoke with dry wood you soaked in water overnight. It's a better flavor than wet wood. I like Cherry, Maple, or Apple 7) smoke and enjoy! Cheers

Great vid Andrew. I'm so tempted to build a small smoker at my camp, that Pike looked awesome. Pike tastes awesome but hate that y-bone, I can never clean them properly. I don' t have diamond willow trees near me but you suggested bark stripped birch so I'll try that. I could see the gash in Charlie's side is healing nicely. Cheers and all the best man. Ed

Man some sugar and salt with soy sauce and tobasco makes really good brine for fish try its real good even if you let it dry longer in the smoker just watch the salt the more you dry it the saltier it will be nice video love eating the dried fish anyday anytime good video thankyou andrew

We use salt brine on the east coast, dip it for a minute and put it in the smoker. We use mostly haddock, and mackeral and they taste really good smoked.

Here is my recipe for smoked salmon: Cut fish in strips or leave whole. i cup salt, 2 cups brown sugar [or white sugar]. 1 tbl dried garlic [ i like to use fresh crushed garlic], 1 tbl pepper, mix all together in bowel, lay fish out and sprinkle this mix on fish and put in bowel to soak 6 hours, wash off and pad dry with towel. I like crushed pepper corns so i sprinkle some on once fish is on smoking rakes, put in smoker. Smoke slowly no flames showing.

I would love to watch you catch fish with a ‘seine-net.’ Seine netting was part of the way I used to catch fish and it was only a 75 metre net in 2 metre deep water but it was hard work, taking two to three hours to catch and transfer the several thousands of fish to the river, I loved to do that! I swear he looks like Boomhauer without the blonde hair. Hey man, if you like tobasco, you should get yourself a container or a shaker of dry cayenne pepper. That's all it is: cayenne and vinegar. I use it a lot in soups, stews and to spice things up.
