Pindi style Chole are a different version of the Chole bhature, this one is inspired from my granny’s recipe, my Chaiji, she had travelled from Rawalpindi to Mumbai during the partition and a lot of her recipes are such unique and interesting ones. The pindi style chole is often referred to the Rawalpindi style chole and This one is a recipe that is done so simply with no onion, no garlic and no tomatoes. I have learnt a lot of recipes from her and I miss her so so much. I remember her often by prepping her recipes and sharing them with you. There are different components but when you do all of them, it’s not that much of a time consuming thing in the kitchen. The flavor of these Chole is something which will strike you with surprise and the texture of it, everything about this recipe is just on point. This one is not for the weak hearted, it requires a lot of ghee and that does the trick. The khatte Aloo, the special chole bhature waali chutney, the bhature and chole, some achaar, everything comes together so well. I have shared all components and also these Chole have that distinct black color I have shared all the tips & tricks, you would know everything by the end of this video. This recipe had a lot of components and I have tried a newer format, I hope you like it! Do let me know some granny recipes if you have some, I would love to know! Cheers! I was in college when our chaiji left us, I had not started cooking professionally by then. I have learnt so much from her and I miss those times when I used to learn from her in the kitchen. I am sure she is watching me cook amazing food and I just love to share her recipes with all of you. Keep blessing me Chaiji, you are always in our hearts 😇🤗

Update: made this again, after a long time - last time the bhaturas didn’t come as well. So, made the dough the previous night this time and doubled the ghee, added a TBSP of oil - turned out buttery and soft. My husband and family loved it. The chole + aloo + chutney was still good. Just that this time bhature turned out better, I think mostly because of overnight rest. Oh my God!!!!! The chole and the aloo and the chutney and achar!!! wow! The whole combo tasted so delicious! sluuurrrrp. I wish I had a bigger stomach to eat more. :-) A thousand thanks to your gramma for passing down the recipe and to you for sharing it with all of us. Feeling grateful, chef!

Nice recipe, followed the steps for chole. For bhature, instead of hand mixing the dough, I added all dough materials in a Breville Food processor and made some amazing soft dough. Proofed it in the oven at 100F for 2 hours. Results were amazing. no need for manual Delhi style labor.
