Hello Tina, Happy belated Mother's Day. Thanks for sharing your post, which I will do tomorrow. I will, however, go light on the sugar for obvious reasons and will be using another ingredient and fresh soft jelly purchased from my coconut vendor yesterday. Hopefully this will be a weekly routine with different fruits.

@@donnaclarke4100 Next time make it in the microwave. I have a recipe up there showing how to do so, its a lot faster and easier. Charles will be back in the kitchen soon don't worry.

@Tinaraine I have seen and heard a few people say they have used the microwave method, but call me old-fashioned. I still like the way my mother and grandmother used to do it, although they didn't use the method of soaking the cornmeal. In the same way, I still believe in grating coconut for sweet bread, turnovers, and pone instead of using a food processor... maybe I need to come into the 21st century. Could you do a cornmeal pap when you get a chance? I didn't do so good at it. Thanks
