cool whip - 16 oz ( 453g )
Sour Cream - 16 oz ( 454 g )
condensed milk - 14 oz ( 396g )
crushed pineapple - 20 oz ( 567g )
Pineapple slices - 20oz ( 567g )
Almonds - 20 ( chopped )
Candied cherries - 10 for garnish
Serves 10 to 12 people

I would like to make this but omit the nuts and use dried coconut instead. I would also dip the crackers in the pineapple juice before layering on the bottom. :)

I made this! I drained the crushed pineapple very well and added 1 pack of Philadelphia Cream Cheese to the liquids bowl. Betwen taking the extra liquid out and adding cream cheese it very much came out like a high end pineapple cheesecake. Delicious! ☮️

I’m sorry! I’m just seeing this. The leftover liquids were minimal so I added extra cream cheese and blended and then added it to the rest. So far I’ve done this with banana and added walnuts, mango (my very favorite). For banana I just eyeballed a bit of a store bought smoothies. I’ve used toasted coconut as topping. There’s so many things you can swap for. Enjoy!

Quick, easy and delicious dessert, which I shall definitely make one of these days. I will however crumble all the crackers up finely then add melted butter before placing this mixture in a spring clip round baking tin that I'll have greased beforehand, patting it down to make a good crust. I'll stick that in the fridge for a couple of hours then put in the filling. Once done, will do as you suggest, cover it and place it in the fridge overnight.
