PIZZA CHEESE

There are several things to know when buying pizza cheese and this short video covers most of them.
I give more details about cheese in my book including age which is very important when buying the block form. Sliced whole milk (3% butterfat) mozz in my opinion is the best pizza cheese but most home pizza bakers aren't willing to go through all that trouble of slicing plus you probably need to order it from one of my sources or another cheese factory in order to find it.
Performance is the key here (how it melts) over flavor as there really isn't much flavor out of mozzarella.
10% provolone is a nice addition when using shredded cheese.
