Steve I just ordered your book. I've lived in Chicagoland for 40 years, and still haven't tried everything. How would you classify the buttery crusted (with rolled edges) style of Chicago pizzas like Falcos or (more well known, Home Run Inn/Reggios), seems to be a southside thing, but isn't quite the normal thin tavern style, but doesn't seem fancy enough to be artisinal.
