Listen to me, if i was the programmer of this game and if i would include Mr. Stick as a playable character, i would add an extra bind for Mr. Stick to use his helicopter hat so you can trigger it without attacking, bouncing on a wall by crashing onto it mid-air while doing the Mach Run or after doing a super jump, though you still could do these things to start using his helicopter hat, and while on the helicopter hat, just press jump to drop off the hat. And this would help the player on a lot of sections like the escape sequence on Ancient Cheese where normally you'll have to do a super jump as Peppino or Noise, but the Mr. Stick's super jump doesn't lasts endlessly (is not even a super jump, it's just a mini super jump) so instead you need to use the helicopter hat for these sections, so this would be very helpful for the player.

Mr. Stick will most likely not be playable in main game levels, theres concept art for his own level icons, as well as mechanics. theres a leaked screenshot from a playtester saying that to beat the level you need to activate 3 switches around the level for the exit to open, and the main purpose of stick mode is to get as much money as possible before leaving the level. hope this explains a bit
