Loved your idea of steaming the pudding instead of using an oven to bake it. I'd suggest soaking some raisins, cranberries, black currants and thinly sliced orange peels in some rum or brandy before adding it in the pudding to give it a boozy X'mas flavour!

That's a good idea though all the booze is going to evaporate while cooking but the flavor will remain 😊

@mgsa5722 the rum/brandy is already soaked by the orange peels and dried fruits and not in a liquid form anyway so nothing much to evaporate and even if it does it would be infused within the pudding as it is inside it and not kept on the top of the pudding.

Yes, you can bake it in the oven for a crispier texture, but I prefer the softer, custardy texture of the no-bake version.

You could use a sugar replacement for the dessert but the caramel is another matter. Most likely not possible. Leg of lamb is easy roasted. Poke holes and stick in garlic slivers and fresh rosemary. Put meat in roasting pan. Add a bit of water and roast till done. Temp testing is best as you can cook to your liking. I was brought up on a sheep farm in NZ and this is how my mother always cooked it. Nothing fancy but it allows the flavour of the meat to shine..
