The obleck (cornstarch and water) does that because the water molecules are smaller than the cornstarch molecules so when you hit it the water molecules are shook from their place to the bottom, leaving the cornstarch. If you put your fingers in slowly, the cornstarch molecules slide around, so that is why it does that.
