How is it that the roots can be harvested from fall to early spring? Does that mean you can’t harvest them in the summer?

From my experience, they can be very tough/fibrous when harvested during warm months. Not all of them, but many, especially the larger they are. I'm guessing that's why

Thanks for stopping by. I would avoid the leaves and if you have sensitive skin I would avoid touching this plant completely. After filming it I was unfortunate enough to get a severe rash that lasted for a long time. Many of the field guides state that the leaves are the cause of photo dermatitis, which from my experience it was worse than any rash I've had from Poison Ivy. Be careful out there!

I see, good to know. I'll keep away from it then. I just found out that the wild plant I found is not parsnip but actually Angelica. I'm looking for info on boiling/steaming the leaves for consumption. If you know anything, please share. Thanks!

"The tender, new stems and leaf stalks when pealed are relished by many as a salad, but they have a rather strong flavor which is removed by boiling in two waters" from Wild Edible Plants of Eastern North America. I would make sure you have a large amount of boiling water in one pot and have another pot ready to actually boil the plant in. From my experience if you boil a plant then submerge it in cold water to boil it again the plant retains its bitterness.
