I love your content, Mo, I really do but, when it comes to Nuzlockes, you really need to train ALL your pokemon, even if you don't want to use them. Like just make them up to par with the trainers on the current route you're on so that they don't get completely bodied when you encounter a boss or a gym leader or something. That way, you won't be in a bind with having only one overpowered pokemon.

I've played through sweet version and I made it to the final gym. OMG! The levels just randomly jump and it's pretty hard so I suggest you train because knowing you, you won't make it unless you train well.

Love watching your nuzlocke videos, gets me fired up to play my own, started Omega Ruby and played while watching. Sadly I lost all of my team, figure I just go back to the starting zone and catch a Pokemon with a pokeball, however it seems all of them just keeps dying so I have counted it as a loss. You can collect from those trees every day. If a day passes IRL, a day will pass in the game. Also, the trainers in that cave are really tough and all their Pokemon are lvl 18 with 4 Pokemon each

Don't quit. Just grind more and think more clearly, stock up on healing items and never allow your sweets to approach a situation that might be dangerous. The rival surprise a few episodes back is just one example. I recommend over training until you have a decent team built up.
