I actually got Seviian Dhelmise from a Seviian Egg. Seviian and Hisuian variants are mainly available postgame. A few Hisuian variants can be obtained from specific Raid Dens.

I'm surprised that arbok didn't have Intimidate. U-turn Intimidate shenanigans is pretty strong.

Until something has Contrary/Defiant/Competitive. But really, I opted for Shed Skin to deal with potential status. Although, maybe I should start switching abilities regularly. However, during an Elite 4 run, you can only switch between normal abilities, not hidden abilities.

Sobble is a starter, you can pick it at the beginning of the game. Then there is an NPC in Celadon City that gives starter eggs in exchange for shards. In earlier versions, certain starters were not available from this NPC because they were gifted by other specific NPCs. But, starting from v4.0 (Gen 9 update), all starters are available from the Celadon NPC.
