It’s one of the most annoying parts of the game when people are just staring at you. There are definitely a lot of possible tells these players are just really strong and disciplined

It's called "reading your opponent". It's one of the most important parts of the whole game... it's most important during a hand. But heck: you can even go to your local casino and sit down at a table and see that all of your opponents are scumbags, or loose players, or very rich [should be playing higher stakes], or stupid and such... and you should be able to have the discipline of thinking in your head: "no thanks, not this table". Not one card dealt and straight away you can get yourself out of financial trouble.
